et al Fine Food & Events, in Highlands, NJ

 

et al Fine Food & Events has been a food shop and catering go-to in Monmouth County for 15 years. The owner, Kim Ramin, and Martin, her husband, moved to Highlands from New York 21 years ago. While that does not afford one “local” status in Highlands, anchoring a business in the community for over 10 of those years just may do it.

For Kim, the et al journey began in 2010 in Allenhurst, NJ. Her next stop was Rumson, with a final stop in her hometown of Highlands. (The business is now in its second Highlands location.) Down Shore Drive is et al. You’ll see it just past the VFW, before you reach the Seastreak ferry to Manhattan. 

Kim and team have always been known for creative, delicious, and high-quality fare. In the summer of 2024, they took the business to the next level by expanding to a bistro-style, dog-friendly restaurant with a cocktail bar. The cocktail bar serves local craft tap beer and seasonal cocktails made with fresh ingredients.

The shop has become a beloved gathering spot for the tight-knit community, offering unique events and high-quality food made with carefully curated ingredients.

The Restaurant

Menu items are often served with house-pressed juice, homemade iced tea, lemonade. Craft drinks are also available in cocktail form. Of course, no menu is complete without a perfectly crafted burger. The restaurant’s staple smashed patties often make regulars out of newcomers. And we hear customers can’t get enough of the grilled hanger steak frites with green beans, hand-cut fries, and a dipping aioli.

“That is the best smashburger in the immediate region,” said Owen Forrester, a Highlands resident. “There isn’t a better burger in Atlantic Highlands, not in Sea Bright. The smash is amazing.”

Many, like Forrester, go to et al for a great smashburger and handmade or hand-selected beverages with friends and loved ones. On Tuesdays, et al offers half of smashburgers along with a tap beer.

As fall turns to winter, Kim often sees customers’ interests shift to items like Fondue for Two.

“I love food—and all different types,” Kim said. “There’s always a story about it, and in some way, there’s a connection to each item. During winter, it’s the fondue pots and pretzel boards. I like the action, along with those items being delicious choices that can pair with wine, spirits, or craft beer.

Of course, et al has a charcuterie board on the menu, complete with artisanal items like saucisson sec and prosciutto and mortadella, and epic cheeses and fixings. For these experiences, Kim remains stocked with her favorite, hand-picked wines that she says pair well with the dishes, plates, boards, and pots on her menu.

On most nights, you can find et al specials as well. Kim likes to mix it up and make food that is honest and filling, to keep dishes seasonal and fresh.

Personal Touch

“On my 60th birthday, I, of course, was at the restaurant, so I threw my own party,” she said. “We offered a $60, three-course prix-fixe with my favorite things: tuna tartare, steak frites, and creme brulee for dessert. We also suggested a glass of wine for each course. It was great value and a fun idea.”

“Our beer selection is local,” Kim said, “with niche craft beers that the IPA-drinker enjoys. Our taps offer PBR to our local Carton 077xx, something for everyone.”

And it’s clear that local customers like Forrester know how to have a proper et al experience. “I like it for an evening cocktail with my wife, Ally,” he said. “They have deals for cheap espresso martinis or margaritas. And it’s always changing with good drink deals for happy hour. Sunset is nice by the koi pond and babbling brook. It looks sick, and it’s just chill.”

Kim’s plan is to make her restaurant a place where locals in Highlands and surrounding towns can frequent et al regularly—and for a range of reasons—for an event, for dinner, for the food store, and even for a catering order.

The food store is open all day. And customers like Forrester will swing by for coffee and homemade baked goods in the early morning.

“It’s the closest coffee for me, so I walk in there with [my dog] Hudson to get coffee and a blueberry scone,” Forrester said. “It’s become a ritual. Also, if you want real bread, not factory slices, et al has legit bread like ciabatta and baguettes.”

After leaving his photography job at the Wall Street Journal, Martin Ramin has come on board to offer his expertise and background as a pastry chef. He also employs a catering chef who manages meals on that front.

“He left his NYC job in May,” Martin said. “Now we can expand to a lot more that we’re excited about. We see this place as a neighborhood bistro all year round. The outdoor patio is enclosed, and with our new heaters, we hope it will be warm.” But, he adds, “People come with coats on for bourbon and fondue. It’s a funky spot. One of the customers said she felt like she was on the Lower East Side and in Vermont at the same time. I thought that hit the nail on the head.”

Today, et al is fully staffed with a strong team that can propel each facet of the business.

“I think that being friendly, warm, and honest with people has been working,” said Kim, who added, “I am the owner, and I am here every night talking to people. I think they see a hardworking person providing value and a great experience. So they come back often.”

VANZ Indian Fusion Grill pioneers a “cloud kitchen” business model, bringing the vibrant flavors of authentic Indian cuisine with a contemporary twist to the Union City, NJ, area. Nestled within the Kerrigan Kitchens building, this fast-casual ghost kitchen concept emerged just a few months ago. Now, VANZ stands poised to serve nourishing Indian bowls, salads, and wraps crafted from high-quality, whole-food ingredients.

Imagine a place like Chipotle or Cava but for Indian cuisine. At VANZ, customers can create salads, wraps, and rice bowls with flavors inspired by traditional Indian cuisine. “We have seven options for bowls,” said owner Vanitha Bala. Customers can build their bowls and choose the type of meal they want. Bala, who has lived in India, Singapore, and England, now calls the United States home. She teamed up with her husband, Aru, to bring this modern and unique concept to life.

“We offer two styles of chicken: a North-Indian-based flavor, Kung Pau chicken style, and a South-Indian flavor,” she said. “The third protein option is beef, and we also have the Goan gourmet salmon, which is traditional Indian salmon. Additionally, we have a Mumbai vegan falafel option with an Indian twist, and a vegetarian option with traditional Delhi Indian paneer. Paneer is a cheese-like protein made from cow’s milk and marinated in tandoori spices.”

Customers’ favorite so far has been the Coastal Goan salmon. However, Bala notes that each dish has a unique background story that customers can learn and appreciate.

“We’ve named the dishes after cities in India,” she said. “The idea is for each bowl to represent a region in India. Our value proposition for customers is to offer unique Indian fusion cuisine that nobody has done before.”

In addition to Indian-fusion flavors, Bala prioritizes the health-and-wellness mission statement of VANZ Indian Fusion Grill.

“Our focus is on wellness and nutritional balance,” she said. “We source pure options that are free of harmful ingredients. Everything is made from scratch. Our recipes are authentic and taken from the past.” Each dish has its own story, adding an authentic personal touch to every meal.

“This is a new flavor,” said Aru Bala, who believes VANZ is unique. “It will be the next Indian name in the U.S. fast-casual restaurant market.”

He asserts that the space Chipotle currently dominates has room for more. And he believes his family’s traditional Indian roots and healthy offerings are its main differentiators.

“In phase one, we honed in on the cloud kitchen model for pickup and delivery rather than a full restaurant,” said Bala, who emphasized that VANZ is not the first to embrace such a concept.

“For example, Mr. Beast franchised his name and restaurant brand to operate in various kitchens worldwide,” Vanitha Bala said. “However, the quality of the food varied among the kitchens. We have control over the contents of our kitchen, ensuring healthy and high-quality food.”

“We offer a distinctive, fresh flavor using natural ingredients,” she said. “Our food is minimally processed, and we avoid using seed oils. We plan to test this concept using the cloud model and expand rapidly to brick-and-mortar locations nationwide.”

“My son, Manish, is on the sales and marketing side,” said Bala. “VANZ was his idea when he was in school for hospitality management. He studied at a premier institute and earned his master’s degree in Miami.”

“I have experience with the operations side of the business,” said Bala. “When we were in Singapore, I worked with special needs kids to find them work in restaurants. I am also the creator of all of the recipes.”

As for Aru, he has been running and investing in businesses for 25 years. With his wife and son, he has set big goals for the restaurant business, which is only in its infancy.

Why New Jersey?

“We felt that our combined skill sets would create a larger business,” said Bala, who is glad to be building the business in a spot that is Jersey City adjacent. “Jersey City is a ripe area with a diverse population where we can test and build the concept.”

Van said the dense, young professional population might need more time to prepare their food, but they want healthy options.

“Our price is about $15 per bowl. We cater to health-conscious individuals who understand the connection between healthy food and a healthy body, mind, and soul,” she said. “Plus, we cater to adventure seekers who want to try new flavors.”

The restaurant will deliver within a five-mile radius of Union City. This service area covers Weehawken, Hoboken, Secaucus, and other areas within this bustling region of New Jersey.

“The channels through which people can reach us are the same as those used by most businesses,” said Bala. People can order directly from the website for pickup. Or they can order delivery through DoorDash and Uber Eats.

Next, the VANZ team will introduce catering options to expand service offerings and customer base for corporate lunches, parties, and other gatherings.

“We will take the first two years to perfect this concept in Union City County, NJ,” said Bala. “We are very focused on operations and our fit in this market. After that, we will rapidly expand in the Tri-State region.”

Unveiling the Legacy: An Interview with Rich Heritage

I recently had the pleasure of sitting down with Rich Heritage, the sixth-generation farmer behind William Heritage Winery. Our conversation delved into the storied past of the winery, its remarkable journey, and its exciting future.

A Legacy of Farming

William Heritage Winery traces its roots back to 1853, when William Heritage purchased the farm in Gloucester County’s Mullica Hill. “The name comes from the original founder of the property,” Rich shared. “My family has lived on the same farm property for six generations, with the seventh generation now growing up here.” Initially, the farm was known for its apple and peach orchards, which were the mainstay crops until market challenges prompted a shift.

In the late 1990s, facing economic pressures from the peach and apple markets, the Heritage family began to explore alternative crops. In 1998, they planted their first grapevines, and by 2002, they released their first wine—a 2001 Chardonnay. This pivotal change was driven by the need to reinvent the farm’s focus and preserve its legacy. “We found that grapes and winemaking would save our family farm and ensure future generations of farming,” Rich explained.

Milestones and Achievements

The journey of William Heritage Winery is marked by numerous milestones. “We were awarded Winery of the Year in 2009, an incredible honor considering there were about 40 wineries in the state at that time,” Rich said. This accolade set the stage for subsequent recognitions, including multiple 90-point scores from prestigious publications like Wine Advocate, Wine Enthusiast, and Decanter Magazine.

The 2010 vintage, in particular, marked a significant leap in quality. It earned the winery its first 90-point score from Wine Advocate for a champagne-style wine. “To be the first New Jersey winery to achieve this was jaw-dropping,” Rich said. “It validated our efforts and set a new standard for us.” This recognition was not just a milestone but a testament to the winery’s dedication to quality and innovation. It opened doors to national and international acclaim, bringing New Jersey wines into the spotlight.

The Unique Terroir of Mullica Hill

Rich emphasized the importance of the winery’s unique location in Mullica Hill, which falls within the Outer Coastal Plain American Viticultural Area (AVA). “Our sandy soil, mixed with loam, provides excellent drainage for grapevines, while the proximity to the ocean and Delaware Bay moderates temperatures and extends the growing season,” he explained. This combination allows for a diverse range of grape varieties to thrive.

The terroir of Mullica Hill offers distinct advantages that have been instrumental in the winery’s success. “We benefit from great wind flow thanks to the ocean and the Delaware Bay, which helps mitigate disease pressure,” Rich noted. Additionally, the natural elevation of their vineyard, one of the highest points south of Trenton, contributes to the unique characteristics of their wines. “Our vineyard has one of the highest points in elevation, which is quite rare in this region. And it really helps with the quality of the grapes.”

Wine Varietals and Consumer Favorites

Discussing their standout wines, Rich highlighted three particular favorites: cabernet Franc, Chardonnay, and their vintage brut champagne. “Cabernet Franc is a standout with its intense fruit and long finish, while Chardonnay has seen a resurgence in popularity with its mineral-driven profile,” he noted. The vintage brut champagne, with multiple 90-point ratings, stands as a testament to the winery’s commitment to quality.

“Cabernet Franc is really special. It’s a varietal you don’t find everywhere, and our customers love it for its unique flavor profile,” Rich explained. The winery’s Chardonnay, often underrated, has gained a dedicated following. “There used to be a movement of ‘anything but Chardonnay,’ but people are rediscovering its potential, especially with our low oak, mineral-driven style.”

The vintage brut champagne is another jewel in their crown. “Our Champagne-style wines have consistently received high ratings from national magazines. In a blind tasting, you’d be hard-pressed to distinguish it from top brands,” Rich proudly stated. The winery’s dedication to producing high-quality sparkling wines has set them apart and earned them a loyal customer base.

Sustainability and Community Engagement

Sustainability is at the heart of William Heritage Winery’s operations. “Our tasting room is 100% solar-powered, and our vineyards are farmed sustainably with minimal use of chemicals,” Rich said. These efforts not only benefit the environment but also enhance wine quality. 

The winery employs various sustainable practices, such as using cover crops to rejuvenate the soil and hand-pulling leaves to avoid compacting the soil with machinery. “Our vineyards are very much alive and thriving because we farm sustainably,” Rich said. “Being kind to Mother Nature has directly contributed to the increase in wine quality.”

The winery also maintains strong ties with the local community. Its tasting room in Haddonfield, NJ, a dry town, was established with careful consideration and support from the local government. “We strive to be good neighbors and engage with the community through various events and initiatives,” Rich said. This approach has fostered a positive relationship with the town and helped the winery become an integral part of the local community.

Looking Ahead

As we look to the future, Rich hinted at exciting developments on the horizon. New wine releases, including a 2022 estate merlot, estate cabernet sauvignon, and an iced cider, are set to debut this fall. “The 2022 vintage is one of the best growing seasons we’ve seen in over five years,” Rich said. “The merlot has lovely strawberry notes and fine leaf tobacco, while the cabernet sauvignon is elegant with black cherry and vanilla oak.”

One particularly thrilling release slated for February 2025 is the winery’s first-ever pinot noir, along with a new sparkling wine to be unveiled at their annual Wine and Chocolate event. “We’ve never released a pinot noir before, so we’re really excited about this,” Rich revealed. “And our new sparkling wine will be a highlight of the event.”

Rich also expressed a desire to see more New Jersey wines featured in local restaurants. “There’s something special about pairing local wines with local produce,” he said. “It enhances the dining experience and supports local agriculture.” The winery has already made strides in this direction, with successful wine dinners at the Borgata Casino and partnerships with restaurants on Long Beach Island.

As Heritage continues to honor its agricultural heritage while embracing new opportunities, there’s no doubt that William Heritage Winery will remain a cherished destination for wine enthusiasts near and far.

Twenty/20 Taphouse in Somerset Is Primed for Football Season

Is there any better feeling than walking through the doors of a local watering hole and seeing countless draft beers on tap, the smell of burgers, and NFL football flashing on surrounding TV screens? Not if you’re a football fan. Football season is here, and the place to spend the season is at Twenty/20 Taphouse, in Somerset, New Jersey.

And this is not just about Sundays. The establishment’s football menu includes discounted food and alcohol for customers anytime there is an NFL game.

“We also have a fun event for our Monday night guests,” said Nick DeLuca, general manager. “New Trail Brewing Broken Heels IPA donated football jerseys to raffle off for each Monday night game. So we have a jersey from all 16 teams—stitched, not screen printed. We’re raffling those to customers who order New Trail.”

Food Favorites

While many customers are satisfied with draft suds, hefty burgers, and sports on the tube, Twenty/20 caters to a wide variety of guests.

“We serve beers and great burgers. The menu is diverse and approachable. We serve a little bit of everything. It’s an American-style taphouse with vegan and vegetarian items, too,” said DeLuca.

We asked DeLuca to name his favorite menu item. “For me, it’s the Firestarter Burger,” he said. “I like the spice, with pepperjack, bacon, and jalapeños, on a fire bun that’s baked with red pepper flakes.” He noted that the best-selling burger is the Taphouse Signature, with bacon, gouda, BBQ sauce, onion straws, and an over-easy egg on a sesame brioche bun.

The eatery also serves double-fried jumbo wings, which DeLuca says the chef “knocks out of the park.” Since Twenty/20 launched its new menu a couple of months back, customers have also been loving the restaurant’s giant charcuterie board.

“It feeds four people for $30 bucks,” said DeLuca. “And it has the works: prosciutto, salami, soppressata, pepperoni, sharp cheddar, smoked provolone, goat cheese, bleu cheese, olive tapenade, cornichons, apricot jam, grapes, apple slices, honey, almonds, crostini, garlic naan, and flatbread crackers. It’s dynamite. Everyone who’s ordered it so far loves assortment and the value.”

The Bar

It’s time to belly up. Twenty/20 has a well-equipped bar with 15 standard draft beers and another 15 rotating drafts that change seasonally, like the pumpkin beers for fall and festbier styles.

At Twenty/20, customers will take advantage of the new beers on draft with opportunities to try $12 beer flights.

“We have a mini-Woodford [Reserve bourbon] barrel. So, we age it for 40 days in house. Plus, we have a tap machine that does espresso martinis with tequila. We make a batch and sell them—always cold, right from the lever.”

“We do some infused tequila and vodka bottles. We’ll change what we infuse it with every so often,” said DeLuca. Right now, we’ve got cucumber and jalapeno-infused Casamigos as well as Tito’s with apples. We’ll serve that over ice with club soda.”

The Team, The Place, The Community

DeLuca made sure to shout out the people he works with. He notes that they have created the Twenty/20 experience.

“They give great service,” he said. “We all know the regulars. But we make everyone feel welcome whether they come in from the hotel next to us or from the local community.”

The restaurant and bar have patios on the front and back deck as well as on the roof. During the warmer months, customers will see a bar truck outside next to games like cornhole, giant Jenga, and a lounge area with couches. The back deck features a smaller patio with fire pits for cooler nights.

Nick DeLuca and his team can also be seen representing the community at local charitable events.

“We do a lot with the Franklin Food Bank,” said DeLuca. “We donate 10 full turkeys with full dinner meals to five families of four people. And we do that every year. We also collect canned goods. Every year, we’re part of a big event at the hotel next door, where we serve food all day for a great charitable cause. We want to be present in our community.”

In the interview, DeLuca emphasized working hard, putting family first, and keeping tight relationships with the people he works with. 

Getting There

“We are not off the main road,” DeLuca said. “Get off I-287 onto Easton Ave. and turn up Cedar Grove Lane to get to us. Sometimes, by the time you see us, you’re passing the entrance. But we’re in with the hotel, and we have plenty of parking spots with a lot that wraps around the bend here, too.”

Bianca Concepcion, Chef, Fossil Farms, Boonton

Born in the Bronx, Chef Bianca Concepcion is a trailblazing Latina chef. She skillfully crafts top-tier dishes featuring exotic meats to guests at Fossil Farms in Boonton. Chef Bianca was introduced to cooking at a young age. Raised in a Puerto Rican household, she fondly remembers learning the pastel-making process from her grandmother during the holiday season. She and her siblings would do homework in the kitchen while their mom cooked. 

Chef Bianca pursued her culinary education at Johnson & Wales University, in Providence, RI. During her four years there, she secured her initial culinary position at Eli’s Bakery and its sister restaurant, Gracie’s. This experience marked her introduction to the challenges of being a cook. Afterward, she returned to New York City, working at Greenwich Wallflower and later as a sous chef at the Freehand Hotel restaurant called The Studio.

Taking a hiatus for the demanding role of motherhood, Bianca never let go of her culinary passion. Post pandemic, she seized the opportunity to reenter the culinary scene, accepting a position as executive sous chef at Fossil Farms, where she was quickly promoted to executive chef.

Along with her collaborative team, she oversees and creates innovative, unique, and fresh dishes made with farm-raised and locally sourced products. Her creations include exotic dishes such as alligator, kangaroo, and wild boar.

Bianca holds a deep love for the classic Puerto Rican dish pernil y arroz con gandules (roast pork with rice and peas), and yuca escabeche (mojo). 

“I am always adapting, always changing, always growing, and with that in mind, I became better and better,” she said.

David Rodriguez, Executive Chef, B2 Bistro, Toms River

Meet Chef David Rodriguez. With over 25 years of industry expertise he brings B2 Bistro in Toms River vibrant flavors of the Caribbean, drawing inspiration from his Dominican roots. 

His journey began in a deli, where he was a dishwasher. This was where he first explored his culinary skills, becoming known for crafting delicious and creative sandwiches. He worked at several locations before landing at B2 Bistro nearly nine years ago. 

As a chef, pinpointing a favorite dish can be tricky, but David shared that one of his favorites is chicharron con tostones, which is fried pork belly and fried plantains. This staple in the Dominican Republic has become an American fast-food dish over the years.

At B2 Bistro, David brings a unique twist to the dish, elevating it into a refined delicacy. “The creative freedom has no limits,” he said. 

Eloy Leonor, Executive Chef, Washington House, Basking Ridge

Chef Eloy started his culinary journey as a child on his family’s farm in Puebla, Mexico, where he was inspired by his mother’s cooking. At the age of 16, he moved to New York in 1990, and got his first job as a dishwasher at a Greek restaurant. As a newcomer, Eloy had to adapt, learning a new language and making his way up the ladder.

With determination, Eloy learned to speak English and kept his desire to be in the kitchen alive. He went to the Ritz Diner in Livingston to get a busboy job and later landed his first line cook position. The rest is history.

Today, Eloy continues to be inspired by his now 80-year-old mother’s cooking. “She makes the best adobo and mole.” 

Eloy mentors his team at Washington House and provides them with opportunities from entry-level positions to more advanced positions as their skills develop. You may also find him up on a ladder, picking apples from Washington House‘s own apple tree.

“I tell my team to love what you do, put in passion, prepare yourself mentally, and things become easy,” said Chef Eloy. “I am always happy. They think I’m crazy because I sing in the kitchen. Not well, but I sing.”

Jesus Delgado, Corporate Chef, Jarana, East Rutherford 

Making a grand entrance into the American Dream Mall in East Rutherford, NJ, Corporate Chef Jesus Delgado brings Jarana. This spot serves up exquisite cuisine and specialty cocktails influenced by Peruvian flavors.

Raised in Peru, Chef Jesus’s culinary journey began in his family’s small market in Lima. From a young age, he was introduced to the kitchen, where he observed his grandfather. This early exposure fueled his passion, leading him to pursue a culinary education at Le Cordon Bleu in Lima, Peru.

He earned a degree in hospitality and tourism from the University of San Martin De Porres, in 2002. After holding various chef positions in Lima, Jesus made his way to the United States in 2012. His initial role was as executive sous chef at Tanta Chicago. 

Jesus’s culinary expertise has been a major factor in his launch of worldwide establishments including La Mar, Manko in Doha, La Gare in Paris, and Terrat at MO Barcelona. 

“Watching people enjoy and learn about authentic Peruvian food, creating new dishes for the menu at Jarana, and training new cooks is my favorite part of what I do,” he shared. 

Executive Chef Juan Carlos “JC” Ortega, Blu on the Hudson, Weehawken

Executive Chef Juan Carlos “JC” Ortega of Blu on the Hudson stands as yet another inspiring culinary maestro. Coming to New York from Ecuador, in 1995, Ortega embarked on his hospitality journey. He got his first job at an Italian restaurant, where he learned the fundamentals of the culinary craft.

Today, he stands as one of the masterminds behind the restaurant’s opening. In a short time, he has steered the new eatery to become a hotspot in North Jersey. Stunning waterfront views and an extraordinary culinary experience centered around steak and seafood help define the restaurant as a true destination. 

Always committed to staying on the cutting edge, JC frequently travels to South America, Europe, and Asia. His travels help him keep up with emerging culinary trends.

“All the uncomfortable moments in my career are the reason I’m comfortable today. And the uncomfortable moments I live today will make me better tomorrow,” he said.

Chef Cesar Cardenas, Salt Creek Grille, Rumson

Executive Chef Cesar Cardenas started as a dishwasher at Salt Creek Grille, Rumson, 22 years ago. Once a shy, albeit ambitious young man who emigrated to the United States at 18 years old from Ecuador, Cardenas rose through the ranks. He excelled in each job he undertook.

He is now in charge of one of the Jersey Shore’s busiest waterfront American grills with a large, open dining room, a bustling bar and lounge, and private dining rooms for up to 150 guests, all with panoramic views of the Navesink River.

The menu centers around the authentic mesquite wood-fired grill serving appetizers, gourmet dinner salads, exceptional sandwiches, Rumson’s best burgers, tender steaks, chops and chicken, fall-off-the bone ribs, fresh seafood, made-to-order sushi and house-made desserts, all made from scratch daily. Cardenas continues to uphold Salt Creek Grille’s two-decade status as a beloved neighborhood landmark, inspiring a sense of community and pride with its “welcome home” ambience.

Chef Bruno Mozon, Girasole, Atlantic City

Chef Bruno Mozo, the culinary talent behind the iconic Girasole in Atlantic City, left Mexico at 18 to apprentice at the restaurant, bringing with him a deep appreciation for fresh ingredients and bold flavors.

His rich Hispanic heritage and innovative approach to the Mediterranean-inspired cuisine shine through in every dish, as he seamlessly fuses traditional Italian techniques with vibrant Latin influences. Chef Bruno’s dedication and creativity has made Girasole a must-visit dining destination for more than three decades, where his stunning and delicious dishes continue to impress guests. 

Chef Lee Sanchez, Tennessee Avenue, Atlantic City

With over two decades of experience in transforming the dining scene in Atlantic City and beyond, Chef Lee Sanchez has a deep passion for creating unforgettable culinary experiences.

Originally from Spain, Lee’s journey in the culinary world includes his role as vice president of food and beverage at Harrah’s Resort. At Harrah’s, he developed award-winning dining and beverage programs, collaborating with renowned chefs including Guy Fieri and Steve Martorano.

He continues to drive innovation across multi-unit restaurant concepts, including projects like Bar 32 and Rhythm & Spirits in Atlantic City. Soon, Lee will be opening a new Rhythm & Spirits location in Philadelphia, further expanding his influence on the dining scene.  

Logan Ramirez, Executive Chef, Gioia Mia, Montclair

Logan Ramirez attended culinary school right out of high school, Star Academy in Newark. Initially, he discovered cooking through curiosity. Having spent his childhood eating in Jersey City and New York, he learned about so many foods. 

The former Chef de Cuisine at Montclair’s Fascino trained at many prestigious restaurants. His credits include training at Highlawn Pavilion and Gramercy Tavern. He was also a sous chef under Chef Ryan DePersio at Battello, all before his time at Fascino.

Now, at Gioia Mia, in partnership with his life-and-business partner, Mary Cumella, he crafts seasonal, locally sourced dishes that are intertwined with elevated comfort.
