The Farm at Glenwood Mountain: Chef-led Dinners and Highland Cow Cameos

 

On a perfect summer evening, we found ourselves tucked away in the hills at The Farm at Glenwood Mountain, surrounded by nature, good food, and about 90 other lucky diners. It’s hard to believe, standing there in the golden hour glow, that just a decade ago, this 180-acre farm had been abandoned and completely hidden from the road beneath decades of overgrowth.

Owners Steve and Candice MacLean purchased the land 10 years ago and have spent the last decade pouring their hearts into restoring it—transforming the forgotten property into a thriving USDA certified organic farm, a wedding & private event venue, and farm market in Vernon, NJ.

Dinner was served in a charming outdoor herb garden, just steps from the barn. A spacious courtyard beneath a canopy of string lights, rustic wood tables mixed with white linens, and vintage metal chairs. The atmosphere struck a perfect balance—simple yet elegant, country casual with a little edge of chic.

From where we sat, we could see beds of basil, rosemary, and vibrant summer vegetables wrapping around the dining area, with the gardens stretching into the horizon. Fresh flowers and candles adorned every table, while the soft murmur of conversation mixed with the occasional moo from the pasture beyond.

Between our salad and main course, they brought in their famous Highland cows for the evening, casually grazing in the distance like models hired for the perfect photo op.

The converted Coney Island Beer trailer, currently serving as their operating kitchen while their new kitchen is being built, was bustling with energy as the team served up course after course of farm-to-table dishes.

Steve, a professional chef trained at the French Culinary Institute in NYC, with past experience at top Manhattan restaurants and the renowned Brick Farm Tavern in Hopewell, NJ, leads the culinary direction here, crafting menus that highlight the farm’s own meat and produce. As each course was presented, Steve made a brief appearance to describe the dish we were about to enjoy.

On The Menu

The dinner menu, commonly not finalized until the morning of the event, was a true celebration of fresh, seasonal flavors, with every course thoughtfully crafted to highlight ingredients grown and raised right on the farm.

We began with Glazed Pork Belly, which was perfectly tender and glazed with a smoky-sweet summer barbecue sauce. It was served alongside a refreshing fennel and kohlrabi slaw, tossed in herbed buttermilk dressing, which was the perfect complement in both taste and texture. 

The next course was a standout: Burrata & Beet. Creamy burrata was paired with crisp, raw spiralized beets, adding a refreshing crunch to each bite. Toasted pine nuts brought just the right amount of texture, while a white balsamic vinaigrette and a sprinkle of fine herbs made the whole dish bright and summery.

For the main, we enjoyed The Farm’s Chicken Caesar — a creative spin on the classic salad. It featured a silky lettuce velouté, crunchy torn sourdough croutons, and a delicate grana padano foam. The chef explained that their pasture-raised chickens grow much more slowly than the typical supermarket bird, resulting in richer, more flavorful meat. For this dish, they used the chicken carcasses to make a deeply concentrated stock, simmering it low and slow over three days until it reduced to almost 10% of its original volume. The result was an incredibly intense “chicken jus” poured over the chicken —easily my favorite dish of the night. You could taste the difference in every bite: rich, comforting, and unmistakably authentic.

Dessert was a Honey Ricotta Cheesecake, topped with berries picked fresh that morning. The ricotta was made fresh on the farm that morning, using milk from their cows. This creamy creation was nested in a toasted pistachio crust, and finished with a touch of fresh mint: light, flavorful, and just the right amount of sweetness to close out the meal.

Every course felt connected to the land around us—simple ingredients elevated by expert technique, all enjoyed in the heart of the farm where it was grown and raised.

More Than Just Dinner: A True Farm Experience

As the sun dipped behind the mountains, casting the sky in shades of lavender and gold, the fires in the cast iron kettles were lit, adding to the magic of the evening. Guests mingled in everything from linen summer dresses to relaxed jeans and button-downs, sipping wine and chatting about the night.

In addition to their public farm dinners, Steve and Candice now host weddings and private events, and have expanded their herd to over 1,800 animals, raising free-range chickens, pigs, sheep, and cattle, with turkeys coming to the farm this week. They also raise heritage rabbits and ducks, and keep bees for honey.

They also offer lodging on the property and operate a farm market stocked with their pasture-raised meats and fresh produce. While it’s remained a bit under the radar, this year marks their 10th anniversary—an incredible milestone for a first generation family-run farm that’s been a true labor of love.

Waking Up to Farm Views and Tranquility

The next morning, waking up in the cute renovated cottage directly across the street from the farm felt like we’d traveled a thousand miles away from reality. We sipped coffee from Adirondack chairs by a small fire pit, looking out over rolling fields where cows grazed quietly in the distance and a slow-moving tractor ambled up the hill. The farm also features a charming attached suite, often used by bridal parties on wedding days but also available for overnight stays. Just across the road, the farmhouse offers the largest accommodations on the property and can be rented for a more spacious, extended stay experience.

After an excellent farm-to-fork breakfast of bacon, sausage, fresh eggs, tiny tomatoes, house-made herbed ricotta, and fresh-baked bread, we headed out on the four-wheeler to get a tour of the property and see some of the livestock and the views of the Appalachian Mountains. 

It was the kind of night—and morning—that reminds you how special these little pockets of the world can be when people put their hearts into them.

Now Open: Refurbished Roadside Diner Reclaims Its Place on the Jersey Circuit

Hey, “Have you heard?” The vintage Roadside Diner in Wall Township, now 76 years old, reopened under new ownership with a fresh, renewed look on July 18. It was a grand soft opening; a positive development for the New Jersey diner circuit, in contrast to the ongoing “diner downturn” in recent years. It’s a gem that’s been polished for a next generation of customers.

As first reported by Jersey Bites last April, Nick and Maria Kallas, the proud owners of the award-winning Broad Street Diner in Keyport, are the new operators of the modular, prefabricated, factory-built Roadside, saving an iconic piece of New Jersey culture and industrial history. The diner has a historic lineage, as it was the 32nd diner built and delivered in 1949 by Silk City Diners, a long-gone division of the old Paterson Vehicle Company.

The Roadside opened its doors at 7 a.m.. By 9 a.m., the parking lot was filled with numerous cars and a special visitor: an impeccably preserved, battery-operated Detroit Electric vehicle, built by the Anderson Electric Car Company in 1914.

Families and individuals sauntered into the diner, sitting on restored booths and round stools, enjoying a host of delicious dishes, such as waffles with berries and bananas, a Polish power bowl, egg platters with bacon, pancakes, and a most impressive smoked beef brisket hash bowl, topped with two eggs over easy.

The first customer to arrive was Gary from Old Bridge, a Kallas family friend and fan of the Broad Street Diner. Seated at the counter, he proudly proclaimed that he’s feeling happy and healthy, having recovered from three strokes.

Also in attendance was Dana Schaeffer of Little Falls, the founder of “Saving NJ Diners,” a website dedicated to “honoring the past, supporting the present, and fueling the future of NJ’s iconic diners.”

A novelty attraction just inside the front door was a classic, mechanical, upright jukebox —a somewhat temperamental contraption that housed a collection of Rock and Roll 45 RPM records. The first selection of the day was “Have You Heard,” a 1963 release by The Duprees, a pre-Beatles Doo Wop vocal group that hailed from Jersey City.

New Jersey Rock legends Bruce Springsteen and Jon Bon Jovi have utilized the Roadside as an artistic backdrop (Bruce, as part of a Jersey shore montage for his 2007 bittersweet video “Girls in Their Summer Clothes”; while Jon and his band posed for a photo shoot at the Roadside for his October 1994 greatest hits album, “Cross Roads”).

The diner retains its original stainless steel charm and intricate tile floor—a signature Silk City design element. An outdoor patio offers an al fresco dining experience for those who enjoy watching cars on the adjacent Route 33/34 highway. A painted, black-and-white outdoor wall displays an homage to the diner’s Silk City legacy.

The Gerakaris family previously ran the diner, retiring after 27 years. They posted a fond online farewell to customers last March. Barry M. Sabin, a retired partner in a Washington, D.C. law firm, is the landlord of the property upon which the Roadside sits. Sabin, interviewed last April, said he’s honor-bound to keep the diner in place, a solemn vow he made to his parents, Milton and Shirley Sabin, who purchased the property in the mid-1970s.

The reopening of the Roadside reinvigorates a beloved venue for Jersey diner goers and foodie fans. The reopening also became a Kallas family affair, with Nick and Maria working alongside sons Yiani, Billy, and Evan. (Evan showed up a bit late for the photo op; no worries.)

The Duprees, in their hit tune “Have You Heard,” provided sentimental background music and vocals for customers on a sparkling Friday summer morning. “Rumors come and go, still I’d like to know, if it’s true, won’t you tell me…” We can tell you that, yes, the “rumors” are true: the Roadside Diner is open for business and under new management.

Jane Doe’s Scratch-Made Magic in Jersey City

Last week, I had the chance to finally experience Jane Doe in Jersey City — and it’s safe to say, it lives up to the hype. This is the type of place where locally sourced, scratch-made ingredients are transformed into incredibly inventive dishes, blending comfort and creativity in every bite. The cuisine is a bold and thoughtful interpretation of modern American flavors with Asian influences, resulting in dishes that are vibrant, balanced, and full of surprises.

Cocktails That Set the Bar High

I kicked things off with The Luciana, a cocktail that immediately set the tone for the night. It’s built on blanco tequila infused with toasted coconut — and I mean real toasted coconut, slowly steeped in a sous-vide bag for hours. The result is a drink that’s light, bright, and refreshingly tropical without being overly sweet. The pineapple adds a frothy top layer and just enough acidity, while the hint of Braulio amaro brings in this whisper of earthiness that ties it all together. Honestly, it tasted like summer in a glass.

Of course, I had to try The Lupe too — mezcal, passion fruit, Calabrian chili, pasilla, and sake — this one is for the spicy cocktail lovers. It delivers heat but with balance, and every sip feels alive with flavor. I loved knowing that, whenever possible, ingredients are locally sourced.

Small Plates, Big Flavor

For food, we started with the Octopus Carpaccio. Thinly sliced, dressed in citrus and gochujang, it was bright, zippy, and the perfect shareable starter — light enough to open up the appetite without weighing you down. Visually, it’s a showstopper.

One of my favorite bites of the night was the Scallion Pancake, a dish I’d come back for again and again. A base of zucchini butter, topped with morel mushrooms from Lifecap Farms, zucchini aioli, and pops of Aleppo pepper heat. It had this incredible mix of creamy, crispy, and umami richness that was just chef’s kiss. Lifecap Farms is a local mushroom farm in Jersey City, doing incredible work. Jane Doe, along with other great local restaurants, has a dedicated tent there to ensure a steady supply of fresh, locally grown mushrooms to meet their needs.

The Steak Yakitori was a surprise standout — juicy shaved beef glazed in a house-made kimchi sauce, resting on a bed of velvety curry aioli. The balance of spicy, sweet, and savory flavors made it completely addictive.

Pasta Done Right — With a Twist

We sampled two pastas, both wildly creative. The first was the Mafaldine.
Made with a Japanese curry vodka saucesmoked Bell & Evans chicken, basil, scallions, Aleppo pepper, and Grana Padano, it was rich yet had a spicy and smoky undertone. Chef described it as one of the more Italian-leaning dishes on the menu. Then the linguini arrived — tossed in a miso-olive oil pesto made with togarashi sunflower seeds instead of pine nuts, as the chef had a nut allergy. It’s dressed with candied sunflower seeds and crunchy garlic breadcrumbs. The citrus notes and sesame made it pop, with textures that kept each bite interesting. I think I prefer the sesame seed version over traditional pesto.

Fresh, Local Fish That Shines

For the main, I had the market fisha gorgeous tilefish sourced from Scale Fish Market. Perfectly cooked, served on a bed of green garlic purée and a vegetable sofrito with Romano beans, and accompanied by lemon aioli. The crispy skin, the juicy flakes of fish, the crunchy, zesty vegetables underneath — it was flawless. Every component on the plate served a purpose, and every bite felt thoughtful.

The Scratch-Made Difference

One of the things that really stood out to me at Jane Doe is their commitment to scratch-made everything. From the milk bread buns used for their burgers — soft, fluffy, and baked fresh in-house — to their custom meat blend that’s ground daily, you can taste the difference in every bite. Their pasta is all made fresh every morning. Every condiment, from the rich and silky smoked onion aioli to the bright, punchy pickled Fresno peppers, is crafted in-house each day. It’s clear that nothing is an afterthought here; every element on the plate and in your glass, no matter how small, is made with intention and care.

To finish, I couldn’t resist the Limoncello Olive Oil Cake — a signature dessert that’s been on the menu since day one. It’s served tres leches style, soaked just enough to be rich and decadent without feeling heavy. The mascarpone frosting adds a silky, creamy finish, and the bright citrus notes keep it balanced. It’s dangerously good — the kind of dessert you tell yourself you’ll just have a bite of… and then suddenly it’s gone.

In the kitchen, Head Chef Arturo Ramos leads the charge — young, energized, and overflowing with creativity, Arturo now curates menus across all the restaurants in the group. Fresh pasta lovers take note: Alexandra Loor is the mastermind behind the house-made pasta, bringing precision and care to every silky strand. It’s a team that not only knows their craft but loves sharing it with every guest.

Pulling all the pieces together is General Manager Enrique Chacon, who plays an intricate role in the guest experience.

The bar is both playful and refined, with quirky details like ceramic butt-shaped straw holders adding a sense of humor and personality. The marble bar top gleams under warm lighting, inviting you to settle in and linger over beautifully crafted cocktails. Behind the bar, the shelves are lined with an eclectic mix of spirits, records, and vintage curiosities, all set against rich, warm wood paneling that gives the space a cozy, retro vibe. Adding to the charm, the team spins vinyl daily before 7 p.m., creating a fun, laid-back vibe — and yes, the bartenders will even take requests. It’s the kind of space that feels equally suited for a relaxed afternoon drink or an intimate evening out.

A Local Favorite — Even for Out-of-Towners

Toward the end of my visit, I met a lovely couple from Ohio at the bar, who told me that Jane Doe is always their first stop whenever they visit Jersey City to see their daughter. It’s the kind of place that leaves an impression — one visit, and you completely understand why.

Jane Doe isn’t just a restaurant — it’s a love letter to high-quality ingredients, local sourcing, and culinary creativity. Every dish was layered, complex, but never overwhelming. I left full, happy, and already planning my next visit.

Wildwoods NJ State Barbecue Championship and Anglesea Blues Festival

The Competition

The three-day festival will feature barbecue teams from around the country showcasing their grill skills in a quest for the best barbecue. There will be teams competing for glory and 1st through 5th places in pulled pork, ribs, chicken, and brisket. The top overall scorer will be named the Grand Champion, and the second overall scorer will be designated the Reserve Grand Champion. The Kansas City Barbecue Society conducts the official judging. The Grand Champion of the New Jersey State Barbecue Championship is eligible to compete in the invitation-only American Royale World Championship held annually in Kansas City, Missouri.

The Anglesea Blues Festival will feature both national and regional blues musicians and is held in conjunction with the New Jersey State Barbecue Championship. The festival kicks off Friday, July 11, from 4-11 p.m. and features The Outcrops from 4-7 p.m. on the mainstage, followed by The Michael Allman Band from 7:30-10:30 p.m.

Saturday, July 12, festival hours are 10 a.m. – 11 p.m. and will include an open-air market featuring lots of food and merchandise vendors. Enjoy FREE live Blues music featuring Bluestime from 11 a.m. – 1 p.m.; Four On The Floor from 1:30-3:30 p.m.; The Billy Walton Band from 4-7 p.m.; and SlideWinder Blues Band from 7:30-10:30 p.m.

The festival concludes on Sunday, July 13 with an open-air market from 10 a.m. – 6 p.m. and judging for the 2025 Barbecue Grand Championship. FREE live blues performances continue with Slim & The Percolators from 11 a.m. – 1 p.m., and Zydeco Go-Go from 1:30 – 4:30 p.m.

The First Annual New Jersey Craft Beer Week!

It’s been long overdue. I mean, we’ve had plenty of one-day celebrations of the Garden State craft beer scene, but it’s finally getting its own week!

The first-ever New Jersey Craft Beer Week, July 13th through the 20th, is the brainchild of Brie Devlin, Executive Director of the Brewers Guild of New Jersey. It’s a part-time gig with big-time aspirations. “It’s the next renaissance of New Jersey craft beer,” she told me when we spoke last week, referring to the recent repeal of some onerous restrictions on breweries and of a new campaign to promote the industry in New Jersey. It’s hard not to share her enthusiasm.

Devlin spent some time in a management role at Czig Meister Brewing (Hackettstown)and as a volunteer for the guild. The naming of her as Executive Director came along with the onboarding of Kaci Collins as Marketing Director. The two have helped revitalize the Guild and have set out to change consumer habits. “The average New Jersey beer drinker doesn’t know about locals,” Devlin told me.

Well, they will now! Or, soon at least.

The fun starts on Sunday, July 13th at New Jersey’s OG craft beer bar, The Cloverleaf Tavern (Caldwell) from 10am to 2pm. They’ll be featuring a Taylor Ham – Pork Roll Brunch! At 3pm, The Landing (Hillsborough) picks up the baton until 8pm. Representing South Jersey, Cinder Bar (Williamstown)joins the fray from 12pm to 4pm. There will be giveaways, food specials, and, of course, great local beer. On Saturday, July 19th, The Stirling Hotel (Stirling) will host a closing event at 5pm.

New Jersey ranks 41st in breweries per capita in the United States. We can do better! We’re Jersey Strong after all. The Brewers Guild of New Jersey has always been active behind the scenes in Trenton advocating for the industry, and now it’s nice to see them out in front of the general public. “Breweries have to be allowed to be creative,” Devlin said, and New Jersey Craft Beer Week is just the beginning.

The New Pike View Diner Beckons New Jersey Travelers

It was a splendid day in May on Kearny Point. The Pike View Diner, located along the Route 9 corridor at the crossroads of North Hackensack Avenue, in the shadows of the New Jersey Turnpike and the Pulaski Skyway, was up and running, receiving customers, which meant a vintage Jersey diner had been saved from demolition.

The Pike View reopened on April 1 and offers a ray of hope in the ongoing “diner downturn” saga in the Diner Capital of the World. As reported here, another classic, factory-built eatery —the stainless steel Roadside Diner in Wall Township, manufactured in Paterson in 1949 by Silk City Diners —is about to be reborn under new ownership.

The Pike View, a modular, prefabricated diner produced by the Kullman Dining Car Company, is a case study in diner evolution and survival. Built in the mid-1940s, it was originally located in New York City and relocated to Kearny Point in 1948, where it was known as the Arena Diner. The Kolokithas family purchased the business in 1989 and operated for nearly 30 years as the Truck Stop Diner, an homage to its next-door neighbor, the New Jersey Truck Stop—a hub for intermodal big rigs traveling in and out of Port Elizabeth and Port Newark.

New owners remodeled the diner with a bright red metal exterior around 2020, renaming it the Bridge View Diner (it’s a stone’s throw from the Lincoln Highway Hackensack River Bridge). However, by 2022, the diner had closed, was put up for sale, and was later slated to be torn down. That’s when the current owner, Dennis Centanni, received a call from an associate in the demolition business.

“My friend told me about a diner in Kearny that was going to be demolished,” Centanni recalled. “He said: ‘I think you might be interested in this place’. My partner (Steven Carr) and I looked at it and we took it,” explaining it was an easy decision, as they quickly recognized the diner’s potential.

Centanni has been working in the food and restaurant industry since 1988, owning restaurants and bakeries in northern and central New Jersey. He also spent time in the corporate world. His family, most notably, has owned and operated Centanni’s Prime Meats in Elizabeth for several generations. “There’s something about the food business. It just draws you in,” he explained, gesturing with his hands.

Todd John Peirone, a master chef, and Centanni have been associates for a quarter-century. In previous years, they operated Revolution Foods, a business dedicated to providing thousands of healthy meals for schools and community groups in Edison.

Centanni praised Peirone’s creativity as a chef. Like Centanni, Peirone has had a long journey in the food business, running kitchens in northern New Jersey restaurants and taverns.

“I’ve always had a joy for cooking. I enjoy feeding people,” Peirone confessed, adding that he considers music and food among the best things in life. Years ago, he had planned to hone his skills at a New York City culinary school, but the school director must have seen something special in Peirone. “He told me I would earn money and learn more about cooking if I worked in a restaurant, rather than pay the school money to teach me.”

The Pike View glistens inside and out, with its stainless steel accoutrements and black and white checkerboard floor tiles. The menu features a variety of grilled chicken entrees, chili cheeseburgers, a “monster” stuffed grilled cheese sandwich, broccoli rabe with pan-seared Italian sausage, quesadillas with lamb or chorizo, chicken wings with an exotic Hawaiian Kaho’Olawe glaze of peppers and pineapples, pancakes, and all the familiar diner egg dishes and salads. One recurring dessert item on the menu, no doubt in high demand among customers, is a “Blueberry Blast” milkshake.

It was approaching noon, and in preparation for the lunch crowd, a tray of assorted, crispy empanadas was placed in a display case on the counter. Eight German tourists entered the Pike View Diner and sat down, looking very happy and hungry. The bright red façade of the diner had caught their eye as they were motoring on the highway. Construction workers dropped in to pick up take-out meals.

Another vintage Jersey diner is serving customers, saved from demolition; a cause for celebration. Another chapter of the Garden State’s history has been saved, preserving memories for many. Another example of iconic, 20th-century American industrial design has been preserved; a distinctive roadside attraction to trumpet New Jersey’s bold spirit and culture. Yes, it was a splendid day in May on Kearny Point, and all is well at the Pike View Diner.

The latest concept from the team behind Heirloom Kitchen opened right next door, called Abramzon & David’s.
