Noshing Kosher at Burger.org

Burger.org of Margate is the South Jersey addition to the fast growing chain of kosher burger joints in Philadelphia, Cherry Hill and soon to be Elkins Park, Pennsylvania locations. The brainchild of Yoni Nadav and Eyal Aranya whose plans include more restaurants around the country. Their slogan is “kosher for everyone” and their goal is to attract kosher and non-kosher diners alike. Lots of people are finding kosher not for just religious reasons, but for the quality, general healthfulness and food safety. They originally started out as an organic restaurant, hence the .org which stood for organic, but later they decided to change to kosher. A novel concept, but a little difficult because of the hours of operation. But, having said that it is definately worth it once you try it!

The menu at Burger.org has many meat and non-meat options. Burgers made of lamb, beef, turkey, fish and veggie with lots of sauces to choose from. There is no cheese, remember it is kosher and that means no mixing dairy with meat. But you won’t miss it I promise you. You can top it with an over easy Fried Egg, Guacamole, Grilled Pastrami, Mushrooms, or Pico De Gallo Plus, it is better for your digestion not to combine the two, but I digress. They also offer Shawarmas, Fried Chicken Schnitzel, Israeli Salad (chopped) and  other salads, as well as Soup of the Day. It was Lentil the day I was there.  I ordered the veggie because I was told it was scrumptious, and I was not disappointed!

You can order all the burgers with a bun or a lettuce wrap. I ordered the bun this time, with French Fries and an Israeli Salad. The burger was full of chunky veggies with pickles, lettuce, onions, tomatoes on top and bottom add to that ketchup and a squirt of mayo and I am in burger heaven. The fries were good too. I would have liked them a little crispier, but that’s just me. The Israeli Salad was mounded high and was crunchy and bright with tomato, cucumber and onions chopped small and topped with lemon and oil. Yummy! I will most certainly be back. I ordered a mixed salad and another veggie burger to go for the next day for lunch. Does that tell you how much I liked it?!

Healthy School Lunches A Requirement This Semester

School lunch offerings will have students from kindergarten through high school seeing green this school year nationwide. Dark leafy greens like spinach and kale and other green vegetables like cucumbers peas and broccoli are part of healthier meals being served in school cafeterias because of stringent new federal nutrition standards now in effect.

What kids won’t see while moving through the lunch line is high fat and fried foods, rich, sugar-laden desserts, or whole milk. The requirements, laid out in the Healthy Hunger-Free Kids Act of 2010, had to be in place by July 1, 2012 for schools to qualify for federal meal reimbursements.

The 21st Annual Culinary Classic

The FoodBank of Monmouth and Ocean Counties will hold its 21st Annual Culinary Classic tasting event on Monday, September 24, 2012 from 5 to 9 p.m.

Folks, this is a not-to-be-missed event. Check out the pictures from last year. The Shore’s original culinary event is now a classic and is considered by many to be the biggest and best tasting event in Monmouth and Ocean Counties. Jewish Holidays Help from Classic Cake Company

Classic Cake Company, with locations in Cherry Hill and Sewell, is revving up for the upcoming holiday season and Chef Robert Bennett is breaking with tradition. The chef is offering up the company’s own Jewish Apple Cake recipe.

With that keep it simple philosophy, Chef Bennett noted a trend in more Kosher requests from non-Jewish customers. He suggests the strict requirements of the Kosher food industry for pure ingredients are the key to the attraction.

Classic Cake has a complete Rosh Hashana and Yom Kippur menu including a recently added new treat Chef Bennett credits to a friend from a France. The Shana Tova is a thin almond cake with caramelized apple compote and a soy milk-honey Bavarian mousse finished with a chocolate glaze. The dessert is Parve, made without any meat or dairy ingredients.

Still not ready to do it yourself? The bakery holds free classes once a month after the store closes at 7pm. Past Classic Cake Academy hands-on seminars include sorbet and chocolate.

“I get to meet our clientele and learn their likes and dislikes,” says Chef Bennett. “It’s good practice for any business.”

Jewish Apple CakeJewish Apple Cake - Classic Cake Company

6 apples, Granny Smith preferred
1 Tbsp. cinnamon
5 Tbsp. sugar

Batter Ingredients:
2 1/2 cups flour, sifted
1 Tbsp. baking powder
1 tsp. salt
1 cup vegetable oil
2 cups sugar
1/4 cup orange juice
2 1/2 tsp. vanilla
4 eggs
1 cup walnuts, chopped (optional)

Preheat oven to 350 degrees. Grease and flour a 9-inch bundt pan.

Peel, core, and chop apples into chunks. Toss with cinnamon and sugar and set aside.

Stir together flour, baking powder, and salt in a large mixing bowl. In a separate bowl, whisk together oil, orange juice, sugar, and vanilla

Mix wet ingredients into the dry ones, then add eggs, one at a time. Scrape down the bowl to ensure all ingredients are incorporated.

Pour half of the batter into the prepared pan. Spread half of the apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top.

Bake for about 1 1/2 hours, or until a tester comes out clean.

If you are a lover of Mexican food and delicious cocktails like I am, you are most certainly going to love Blue Moon Mexican Cafe. They have three locations in North Jersey: Woodcliff Lake, Wyckoff, and the one closest to me, Englewood. They also have a location in Bronxville, New York. When I first went there, I thought it was like any other Mexican joint, but it isn’t. If you know me, I am always searching for a deal and they have plenty.

The first time I went, I had one of their dinner combination platters, which are a choice of a taco, burrito, tostada, or enchilada. You can either get a double combination platter for $11.50 which I got or a triple for $14.50. Either way, your getting a ton of food for a reasonable price. Cocktails are not something to ignore at  Blue Moon, they have tons of specialty cocktails and even serve Skinny cocktails, like the Skinny Mamacita ($8). Last time I went, I had  the Sangrita ($9) which is a Sangria & Margarita mix and it’s delicious. I also had one of the signature burritos, the Triple Play ($16.95). The Triple Play is not just any burrito and is filled with steak, shrimp, chicken, black beans, pepper jack cheese, tomatillo sauce, & pico de gallo in flour tortillas. Let’s just say, it’s a great for dinner and there are always plenty of leftovers.

Also, Blue Moon Mexican Cafe is part of the EatDrinkNJ program, which means if you have a VIP card, you get 10% off everyday. It’s just an addition to the deals you’ll be getting already and totally worth it. You can also currently get the VIP cards for buy one, get one free online now.

I know Blue Moon is one of the first places my roommates and I think to go to when we want to go out. The food is great, service is always friendly, and it’s always a great time. They have outside seating which is a plus in the summer & fall.  If you check it out, let me know if you agree.

Kolo Klub, Hoboken’s Newest Events Loft

There is truly something remarkable about restoring turn-of-the-century buildings into twenty first century pristine locations. By pristine, I mean leaving just the right amount of age to the foundation while updating seating and architectural elements.  Think exposed brick walls combined with leather lounge chairs or perhaps shiny subway tiles in conjunction with dramatically high hardwood ceilings. Sounds worthy of a visit, right? Indeed it is, as Hoboken’s newest events loft Kolo Klub is ready for your next party or just a night out. Advertised as, “A Culinary & Celebratory Destination,” this aged building turned opened loft is quite the place to be!

The Kolo Klub recently held its Grand Opening Party where my husband and I were able to experience all that Kolo has to offer. Proprietors Andrej Ivanov and Ladislav Sebestyan,  founders of the Pilsener Haus & Biergarten, were excited to see what they have always envisioned come into fruition. The space is a partnership between the Pilsener Haus & Biergarten and AD Catering & Events. On hand was Anthony Pino, owner and Executive Chef of both The Dining Room at Anthony David’s and Bin 14, and also of the previously mentioned AD Catering & Events. In addition, we were lucky enough to speak with some of the partners involved in making this artisan-built loft space. Mixologists, the team behind Ward III & The Rum House, were present to explain their innovative and unique cocktails. Butler style appetizers were generously passed among the party while the Hosts also provided us with an elaborate cheese, meat, and olive table to grab a bite from.

As one of the most important parts of hosting events is having great food, I think it’s appropriate to start there. Chef Pino did a remarkable job delivering the guests with some impressive small bites. The snack-size crab cakes were encased in a crunchy shell yet had a seasoned and light seafood filling. The lobster toast option was our favorite of the night, as the lobster meat was definitive while the bacon bits atop provided the perfect amount of crispiness. Another hit of the night was the crab with mint puree, a novel twist for the more adventuresome eater. Finally, what also caught our attention was the lamb meatball with a cool tzatziki sauce. It was decently hearty but still small enough to help us enjoy more while lingering around. Where do you think we lingered to I must ask? The cheese table, of course! After three hours of revisiting that attraction, I continued to find more to admire. The breads and crackers were full of not only variety but freshness and the cheeses: top-notch. From sharp and pungent to creamy and crumbly, they satisfied all in attendance.

So while we passed the time eating little treats here and there, we also got a chance to take-in the space and décor. To put in simply, we were in awe of the place from floor to ceiling. The floors were hardwood and somehow sported a rustic and renovated feel. The wood columns spaced throughout were pronounced and provided distinction to certain areas of the huge room. The walls were a cool mix of brick and subway tiles which appealed to the eye both texturally and visually. What we most were mesmerized by though was the ceiling. It was made of glistening hardwood and shaped like the inside of a wine barrel so in essence, you felt like you were inside one. It is something you truly have to see to really understand. Last but not least was the one of a kind décor. The blinds were all drawn giving the space an “after hours” feel while circa 1910-1920 photos lined the wall. Shadows of various European words lit up the walls and gave you the feeling you were in Eastern Europe almost a century ago. Again, translating this to words is almost impossible, as seeing it in person is the only way to do it justice. Open and old-fashioned film reels occupied a few areas and without a doubt made us feel like we were in a different era.

We were lucky enough to be given a tour and listen to a few ideas about how to use this location. There was a smaller room, known was as the screening room, for smaller parties or as one couple did, used as a Chapel. The bar area was large enough to cater to large parties but also quaint enough not to be displaced among a more intimate gathering. Chef Pino’s attention to detail and pride in his work is quite evident so we weren’t surprised to find out he is both flexible and understanding with his customers. And even though the room is quite spacious, it can be separated and refigured to certain requests. While we were there, the arrangement of lounge “corners”, high top tables and small seating trios were just right for what was somewhat of an “extended cocktail hour” party. Fittingly, this type of party seems to be quite popular these days as we learned about current Kolo customers requesting this. Picture passed hor d’oeuvres and small plates all night, but miraculously moving from lighter to heavier options as the hours pass.  Not a bad idea at all, as I think we all agree the best part of a wedding is the cocktail hour (well, aside from the dancing!)!

Downstairs was the Pilsener Haus & Biergarten and this was quite a sight to see. While everything upstairs seemed dramatic and exclusive, this was open, rowdy, and oh-so casual. The adjacent outdoor Biergarten seating area was filled to the brim with guests enjoying their company and the well-kept surroundings. It would make for an awesome after-party option for any guest looking to stretch out their event.

Currently, Kolo Klub is open for the public to come and enjoy this new hotspot during the weekends.  If you plan on visiting, it would be best to call/check ahead as certain days may be booked in advance.  For those wanting to host an event, feel free to contact them, visit their website, or take a walk-through. They are available to cater numerous events including, but not limited to, weddings, private parties/gatherings, fundraisers, and corporate events. Whichever way you get to experience this place though, whether hosting, attending or simply chilling out, I definitely think you’ll be amazed.

A Chat With Bobby Flay At The Opening of Bobby’s Burger Palace In Princeton

Known for his southwestern favors like chipotle and jalapeño, one would think celebrity chef  Bobby Flay had western roots. Not so much. He was born and raised in New York City. And like most New Yorkers spent his summers on New Jersey beaches and boardwalks. “I spent my first five or six summers at the Jersey Shore,” said the 47-year-old Flay, who noted his mother lives in Spring Lake. “I’ve always had a connection with Jersey.”

His childhood summers and the classic barbecues that took place during them helped shape the chef he would become. “Because I’ve done so many shows about outdoor cooking, grilling and barbecuing, people always ask me, you’re from New York City, how is that a grilling environment?” said Flay. “The answer is it’s not, it came from my summers in New Jersey and being inspired by my parents cooking outside. Things that are part of your childhood become part of you for the rest of your life.”

Burgers, steaks, lobsters, corn and tomatoes were key ingredients during the summer months.

“Hence, I’ve been a burger guy,” he said, noting after working in the kitchen all night long, he would go out for a burger, his favorite go-to food. “It’s always been my go-to comfort food. I was always interested in one day opening my own burger place, that’s how Bobby’s Burger Palace was born.”

The Princeton location is the fourth BBP in New Jersey and 11 in the chain, which only serves burgers, fries and shakes.

“All three of those things have to be great for me to be successful,” said Flay. “I find a lot of burger restaurants the burger will be great and the fries will be ok. To make a great restaurant, even in a casual environment like this, all three things, if you are going to serve them, have to be top notch.”

The Burger Palace’s 10 burgers are all unique and are themed to different regions of the country and can be ordered with beef, turkey or chicken breast.

The Napa Valley turkey burger I had, which had a generous glob of goat cheese was good and moist when it came, but since it was a press event, I didn’t get to eat it in its ideal state when it came fresh off the grill because I was so busy taking photos and talking to folks!

My only two tiny complaints would be the Meyer lemon sauce that came with the burger was disappointing because the Dijon flavor overpowered the lemon and the bun had sesame seeds all over it and I’m not a sesame seed bun kind of gal, but that’s purely a preference of mine.

Burgers also come topless on a bed of salad greens. There are griddled, four cheese sandwiches and a salad with chopped vegetables and tortilla strips as vegetarian options.

The sweet potato fries are really, really good. They are a nice long cut,  salted well and come with a creamy honey mustard that I think would be good on just about anything.

The star of the show for me was the milkshake.

Every shake in the menu contains a whopping 11 ounces of premium ice cream, which accounts for the super thick texture and whole milk adds additional creaminess.

The dark chocolate shake is decadent, really chocolatey and completely divine, worth all the guilt! I was dreaming about that shake the night before the opening!

One of Flay’s challenges-not of the Iron Chef or Throwdown kind-in the near future is teaching his 16-year-old daughter to cook before she goes off to college. “I can’t send my daughter off to college not knowing how to cook,” he said. “She’ll be ridiculed.”

Flay is a French Culinary Institute graduate after dropping out of high school. “I think everybody learns differently, we are seeing that more and more these days. When I was going to high school there were very few options. You went to school, you took liberal arts and hopefully you went to college and you went off and lived the rest of your life,” said Flay. “I was so disinterested in school, it was not the way I wanted to learn. I wanted to learn with my hands. I needed a craft and I didn’t know that at the time. When I started working in a restaurant, it was the first thing I really got excited about in my life in terms of doing something and it took off from there.”

Working in the culinary industry for 30 years, he has savored the way his world revolves around food. “It’s about that one four-letter word, food,” he said. “I’ve learned as I’ve gone.” His food empire revolves around his restaurants, books and television shows.

His latest show, “Three Days To Open,” ended after only six episodes, despite it’s success.

“It proved to be so difficult,” Flay explained. “When I open a restaurant, I have six key people who work on different facets of the restaurant.  In ‘Three Days To Open’ I’m basically doing everything to get these people, who have never done this before, to open…and ultimately it was so physically and emotionally exhausting that I decided I couldn’t do it anymore.”

Despite the show not working for him, Flay has multiple restaurants in New Jersey, New York and Las Vegas, several cooking shows on the Food Network, and many cookbooks, including a book called “Bobby Flay’s Burgers, Fries & Shakes” for a fix when you can’t get to his burger palace.

Note there are detailed directions for making his magical milkshakes in the book, although there isn’t a plain dark chocolate one like the one at the Burger Palace. Le sigh. I guess that means I’ll be back for that and the sweet potato fries.

BBP menu includes 10 signature burgers such as the Philadelphia Burger with Provolone cheese, griddled onions and hot peppers; the Buffalo Style Burger with red hot sauce, blue cheese dressing and watercress; the Dallas Burger spice crusted with coleslaw, Monterey Jack, BBQ sauce, and pickles; the Santa Fe Burger with queso sauce, pickled jalapeños, and blue corn chips; and the Palace Classic Burger with American cheeselettuce,tomato and red onion – are all served on a sesame seed bun.

New Jersey’s Autumn Ales

The weather is getting cooler, football helmets are getting buckled on, and the baseball pennant races are heating up.  For school kids, the faces are getting longer as the days get a little shorter and the academic year begins.   Summer in New Jersey is wonderful and we’ll miss it, but for craft beer lovers there is solace. For enjoying beer, there is no better season than the fall .  If you can’t make it to Germany for Oktoberfest, don’t worry.  We don’t know from Lederhosen, but we sure know beer.

Fall conjures up visions of piles of russet colored leaves and the ubiquitous pumpkin.  For traditionalists that means Oktoberfest and pumpkin beer.  Oktoberfest, with its toffee and spice notes lies between Pilsner and Bock in terms of strength.  “With the cooler weather your taste buds gravitate to some richer flavors in both food and drink.“ says Gene Muller of Flying Fish. Their newly expanded green brewery in  Somerdale should be turning out  it’s Oktober Fish in plenty of time for the cooler temperatures.  Dave Hoffman of Climax Brewing has German beers styles right in his wheelhouse.  His Oktoberfest is due out soon and it too can give Munich a run for its money.  Plus, it will go perfectly with those brat’s you just threw on the grill.  It seems like there are almost as many pumpkin beers as there are pumpkins these days.  There are stand outs however, and River Horse’s Hippo Lantern Imperial Pumpkin is one.  It’s big and full of Jersey attitude.  It comes in a four pack and dares you to drink all four.  Don’t plan on bobbing for apples when you’re done though.  Pour a glass with your apple or pumpkin pie.

Beer geeks take comfort in tradition, but they really like to mix things up too.  Let’s look at some New Jersey Brewers that are thinking outside the pumpkin.  In fact, there’re thinking about apples.  Apple cider is a fall staple, but make beer with it?  Crazy.  How about reducing it and then using  it in a Belgian strong ale instead of candi-sugar?  I wish I’d thought of that but Kane Brewing is the one who did.  You really experience the apple cider up front but, like all of their beers, it finishes dry.  It’s called  Malus and look for it in bottles in now.   Cape May Brewing is thinking about apples too.  They’ve worked up a bready and biscuity  malt bill then fermented their creation with apples.  Cape May Apple Pie ale sounds like a must try to me.  They didn’t stop at apples either.  A cranberry wheat and their first pumpkin beer are both in the works.

Leaf peepers love to lace up the hiking boots and hit the trail to revel in the blazing fall foliage.  That’s what Carton Brewing was thinking about when they created GORP (Good Old Raisins and Peanut trail mix).  A beer that tastes like trail mix?  According to them it has a “porter malt bill with peanut butter and chocolate added to the boil, then fermented on black raisins with Belgian and Chico yeasts.”    I might have to hike up to Atlantic Highlands and fill up a growler.  If you like tradition with a twist, how about Pumpkin  Cream Ale?  It’s a high gravity cream ale with roasted pumpkin, peppercorns and orange oil.  Throw in some candied ginger to the boil and you have a very different take on pumpkin beer.  Carton Brewing advises you to “Drink Pumpkin Cream Ale because there are spices on the shelf behind the nutmeg.”  Indeed there are and I can’t wait to try it.  It will be in retail stores next week.

So, as you pack away the shorts and bathing suits and unpack the sweaters, take heart.  The flavors of fall beer lie just ahead.  When you’re done with the leaf raking and the hiking, and it’s time to sit down and watch some grid iron action there will be plenty of beer to chose from.

Wine Tasting Fundraiser, Saturday, September 15th from 12pm-3pm. Creative Heartwork, an organization that utilizes the power of the arts to heal children who have experienced trauma, loss, serious illness, or disabilities, will hold a fundraiser at Ninety Acres Culinary Center, 2 Main St, Peapack. This family fun festival features live music, activities and unlimited Chowder tasting with the opportunity for each ticket holder to vote for their favorite red and white chowder. The event is nestled in Beach Haven surrounded by beautiful views of the bay and plenty of year end discounted shopping. It has become a tradition for family and friends to gather together to say good bye to summer and welcome in the fall.
