Sea & Sand Indian Fusion just opened its doors in Highlands, NJ. The cozy space, tucked right along Bay Avenue, is a very welcome addition to the dining scene at the Jersey Shore. What truly sets Sea & Sand apart is the vision of Chef Premjit Namdev Khaire. With nearly 30 years of culinary experience spanning India, the Middle East, Malaysia, and now the U.S., he brings an incredible depth of knowledge and artistry to every plate. Born in Mumbai into a family of chefs, Chef Premjit is carrying on a proud tradition, but with a flair that is uniquely his own.

One of his many roles was serving as the Embassy Chef for Ireland in Riyadh, where he designed high-profile menus for ambassadors and dignitaries. It’s the kind of background that explains the level of polish and creativity you see in each dish.

I couldn’t wait to dive in, and the dish that absolutely stole the show was Chef Premjit’s signature Murg Mussalam. This Mughlai-inspired masterpiece is unlike anything I’ve tried at the Shore: a boneless half tandoori chicken simmered in a rich, spiced tomato-based gravy, blended with grated boiled eggs and minced meat. The flavors were deep, layered, and luxurious, yet perfectly balanced so that every bite felt indulgent without being heavy. Paired with their warm, pillowy naan, it’s the kind of dish you’ll be thinking about long after you leave.

What really impressed me, though, were the little touches—how each spice was layered, how the sauces were balanced, and how the flavors lingered without overwhelming. The menu also leans into coastal influences, with lighter seafood options and hints of coconut and tamarind that remind you of India’s shoreline kitchens. And for those who love to share, the small plates are a fun way to sample a variety of flavors.

By the end of my meal, I found myself already planning my next visit. Sea & Sand isn’t just a great addition to Highlands—it’s the kind of restaurant that makes you want to bring friends, explore more of the menu, and linger over the flavors a little longer.
