Dauphin Grille in Asbury Park: Deal Alert!

The New York Times awarded the Dauphin Grille a coveted “Worth It” rating in their September, 2011 review of the restaurant whose menu is described as “seasonal bistro fare with a European flare.”  Dauphin’s Chef, Peter Connelly, was the owner of Pasta Fresca in Shrewsbury for many years, and as I recall, his fresh pastas were made daily and would quickly sell out.  I used to drive up from Ocean County to score some of his fresh raviolis to finish off at home with his house made sauces. The Times review points out that his pasta dishes at Dauphin demonstrate his “sure hand with pastas and sauces.”

The restaurant’s commitment to fresh, locally sourced produce is easily seen through their own edible garden on the property as well as sourcing thru zone 7 and the local farmers who participate in the Asbury Park farmers’ market which resumes in June. “People really enjoy the purity of our food as well as, believe it or not, our ” Berekely Burger” explained owner Marilyn Schlossbach, “which is a house blend of meat and aged Gouda and caramelized onions.”

Some of their more intriguing appetizers include Pumpkin and Asiago Risotto Fritter with spiced apple creme fresh, Mollusques “Cioppino” which includes a daily selection of Button Clams or Black Mussels served in a spicy tomato, shaved fennel and saffron broth and Grass Fed Beef Carpaccio with pomegranate drizzle, house made pork belly croutons, shaved Parmigiano and micro greens.

For main courses, how about the Grilled NY Strip Steak with fresh Thyme Gruyere Potato Gratin and Glazed Cipollini Onions or if it is fish you wish, Winter present Sustainable Catch of the Day with warm Farro Winter Vegetable Salad and, of course, the house made pasta dishes.

Irish Pub Plans Four-Day Celebration With Irish Fare, Drink Specials And Live Music

At The Shannon Rose with three locations in Ramsey, Clifton and Woodbridge, it’s St. Patrick’s Day every day but from March 14-17, this authentic Irish Pub will host one of the biggest St. Patrick Day parties in New Jersey.  The four-day celebration includes leprechaun-approved Irish fare, drink specials and live music for all who are Irish at heart.

Adara – Elevating Fine Dining in Northern New Jersey

On a recent visit, our party opted for the 5-course menu that featured such dishes as the New England Clam Chowder – a bowl of complex flavors served with quail egg, masago, maple pancetta and tasty foam that Adara calls “deep sea wind”, the Campania – chef Ghoshal’s version of Caprese salad with vine ripe tomatoes, a mozzarella ‘balloon’, an extra virgin olive oil sorbet and basil, the White Truffle Envelope – a Hudson Valley foie gras-filled raviolo served with kumquat mostarda, cappuccino and pistachio, and the Lobster in a Veil – served with uni, celery root and Bengal curry.  One dish is better than the next and creates a kid-in-a-candy-store feeling among diners.

Adara is a BYO, representing an affordable opportunity for guests to bring special bottles from their wine cellars to pair with the eclectic food.  Stemware is of the best quality, enhancing the experience.

Build a Rain Barrel Workshop, Saturday, March 10th at 9:30am. Rutgers Cooperative Extension of Middlesex County presents Build a Rain Barrel workshop. Jersey Shore Restaurant Week™ Returns in April

The eagerly anticipated Jersey Shore Restaurant Week™ returns to the area April 13-22, 2012. Nearly 70 restaurants from the Highlands to Toms River will be participating, offering three course meals with three choices in each category for $20.12 or $30.12. Show-Stopping Peanut Butter Concoctions

Who knew there was a National Peanut Month? The month of March has been designated by the National Peanut Board (NPB) to showcase the peanut and I’m actually pretty happy for this humble little legume. Peanut allergies not withstanding, this little ‘nut’ is very talented nutrition-wise. Peanuts have higher antioxidant properties than grapes, green tea, tomatoes, spinach, broccoli and carrots. What better time to turn the spotlight on Mercury Amodio? The entrepreneur has based the menu of her restaurant, PBandU, on nothing less than that perpetual understudy, peanut butter sandwiches. PBandU opened its second location last month inside Moorestown Mall in Moorestown, Burlington County. I visited recently and was treated to some scrumptious, peanut-buttery concoctions prepared with simple ingredients combined in unusual ways with delicious results.

Amodio’s ‘why didn’t I think of that?’ idea offers a whole new fast-food dining experience revolving around the tasty bread-spread ubiquitous in homes but rarely found on restaurant menus.Amodio has taken an unusual route to end up in the restaurant business. She attended a performing arts high school and has a degree in music education. Even after several years invested in the music industry in New York City, she opted to move closer to her hometown in the Philadelphia area with the idea to cast her favorite childhood food as the star of the show in her new venture.

All the peanut butter at PBandU is made right in the shop. There are no additives, just ground up peanuts in five varieties: home-style, creamy, super chunky, organic and one laced with chocolate morsels. 18 different toppings and five different types of bread mean an almost infinite number of combinations to try.
Toppings include healthy fruit options like apples, raisins and bananas; favorite stand-bys like strawberry and grape jelly; crunchy options including pretzels, potato chips and celery; sweets like M&M’s, cinnamon sugar and honey; and even items you wouldn’t necessarily think of as being complementary to peanut butter like pickles, cheddar cheese and bacon.
PBandU offers a few of their own unique combinations on the menu including a peanut butter, bacon, cheddar cheese and pickle sandwich. I tried this combo and it was pretty tasty. If you prefer, Nutella, marshmallow Fluff and M&M’s will sate when your sweet tooth is kicking in. If you can’t decide, order the Sliders; three different choices on Slider buns.

Along with the peanut butter sandwiches, the menu also features supporting players like PBU “pizza” on flat bread with two toppings of your choice; or Peanut Butter “Fondue” served with dippers like apples, bananas, celery, pretzels or pound cake. Entrées are served with a bag of Sunchips on the side.
Prices for sandwiches and peanut butter pizzas and fondue range from $3.50 – $9.00.
Beverages available include creamy milkshakes ($4.00), the PBU Smoothie made with a frozen banana ($4.00), soda, milk, a variety of teas and coffee.

New Jersey Nick’s Pick: Don’s Burgers, Fries and Fountain in Morristown

While Don’s Burgers, Fries and Fountain is a new eatery in Morristown, the restaurant claims its legacy can be traced to the now beloved Don’s Drive-in formerly of Livingston. Don’s was a part of Livingston for 40 years, and closed in the mid-90’s as its business was lost to encroaching fast food chains. Now, its been revived as a part of the modern ‘better burger’ trend that has given rise to quality burger chains across the state. The new owners claim on their website that they seek to serve the spirit of Don’s Drive-in by serving good food with quality and respect for their customers.

Recipe: Brown Sugar and Dijon Glazed Corned Beef and Cabbage with Red Potatoes

A brown sugar and maple glaze on corned beef adds a sweet and spicy kick to your St. Patrick’s Day dinner.

As someone who is constantly testing, tweaking, and altering recipes, Brown Sugar and Dijon Glazed Corned Beef and Cabbage with Red Potatoes is one recipe that I dare not change. My Irish husband requests that I do not tamper with his favorite meal from his homeland. Not that his homeland is Ireland; he is actually from the suburbs of Chicago. But he is Irish all the same.

I typically thought that the traditional Irish dinner of boiled corned beef, cabbage, red potatoes, and carrots lacked flavor. Over the last 20 years, my recipe has evolved, and I inject flavor by adding sauerkraut to the simmering corned beef and adding a sweet and spicy glaze on top. With the addition of a loaf of Spotted Dog or Irish soda bread, dinner is complete.

And there are usually leftovers which make my Irish husband very, very happy.

Brown Sugar and Dijon Glazed Corned Beef and Cabbage with Red Potatoes

4 pounds corned beef

1 (28 ounce) can sauerkraut

1 1/2 pounds small red potatoes

1 pound green cabbage, cut into 5 wedges

6 carrots, peeled and cut in 2 inch pieces

1/3 cup brown sugar

3 tablespoons Dijon mustard

Place corned beef, fat side up in a large stock pot and cover with water. Add the pickling spices if they were included with the corned beef and sauerkraut. Cover and simmer over low heat until beef is tender when pierced with a fork about 31/2 hours. Add the potatoes, cabbage, and carrots and continue simmering for an additional 45 minutes.

Preheat oven to 425 degrees. Line a baking sheet with foil and place the cooked corned beef fat side up. Leave the vegetables in the pot while the corned beef is in the oven.

In a small bowl, combine the Dijon mustard and brown sugar. Spread the mixture over the top and sides of the corned beef. Bake in oven for 15 – 20 minutes, or until the the sauce begins to caramelize. Remove from the oven, cover, and let rest for 5 minutes.

Transfer the corned beef to a cutting board and slice against the grain. Place on a platter and surround with the potatoes, cabbage, and carrots.

Atlantic City Restaurant Week March 4 – 10

Atlantic City Restaurant Week begins today. I hope you have your reservations! I have mine! To help kick off the event The Atlantic City Country Club was the place to be for the Taste of Atlantic City Restaurant Week Exclusive Preview Event. One hundred percent of the proceeds benefited the ACCVA Foundation, Alcove of Atlantic County, and Community Foodbank of NJ. Fifteen of the restaurants participating in Atlantic City Restaurant Week were on hand to highlight one or more of their signature dishes to hundreds of hungry diners more than happy to oblige.

The restaurants were set up all around the dining room as far as the eye could see with creative small plates which The Atlantic City Press was kind enough to make an easy task of carrying with a cute blue tray with a space for a drink and a  plate or two or three. Our friends along with my husband and myself made our way around (and around) eating from all the delicious offerings. Phillips’s Seafood served mini-crab cakes with cajun remoulade, . It was Lobster Avocado Taquito at Fin, Tropicana. Clam Chowder from Harry’s Oyster Bar and Seafood at Bally’s and  Misoyake marinated Emperor Black Cod and Coconut with Mascapone Risotto from The Reserve.  Host Ed Dagger created Shrimp and Chorizo Spring Rolls with Wasabi Mustard and Sweet and Sour sauce. These scrumptious dishes were only some of the best of the best ofl City! Melting Pot dipped “Ginormous” Strawberries in sweet chocolate, not to mention a Dessert Room filled with delectable pastries, mousse, cookies and everything in between. Specialty desserts were also hand crafted by Harrah’s Executive chef. Cotton Candy Cake (it looked just like it), Red Velvet and Fudge cake was represented by Sammy D’s at Harrahs. Music was playing and the bar was open adding to the festivities.

What are your favorite food memories? For many, they are the wonderful dishes from childhood, prepared with love by parents, grandparents, aunts and uncles.

Using these family favorites as the basis for a restaurant is not a new concept. But, for Mexican restaurants in South Jersey, it is a trend that is creeping across the region. The food at these eateries is a far cry from the chain-restaurant simplifications or inventions that many South Jerseyans had been accustomed to (run for the border, anyone?).

And the new style is finding an audience among diners who have become more adventurous themselves — “foodies” who have had their tastes widened by influences like the Food Network, which launched in 1993.

The Cordova family moved to New Jersey from Puebla, Mexico, and 10 year ago opened La Esperanza in Lindenwold. Members of the family, including father Saul Cordova, had been working in the restaurant industry in New York for several years. At the urging of the family, Saul made the decision to take a chance on his own.

Daryl Wine Bar Restaurant in New Brunswick

Let me let you in on a little secret. New Brunswick, an already dynamic and exceptional dining destination, just got even better.  No, more parking lots weren’t added, but what has happened just might get you on the turnpike and over to the home of the Scarlet Knights! Under new Executive Chef and partner Zod Arifai, Daryl Wine Bar Restaurant has reopened and is ready to please. Arifai, most notably of Montclair’s Blu, has transformed and updated a key piece of the New Brunswick dining puzzle.

As of December, Zod has taken over the reigns of both the kitchen and atmosphere of this New Brunswick hot spot. Décor changes have improved the tranquility of the space and made for a more casual yet trendy feel. His menu features eye-catching  items such as seafood dumplings ($12) in a spicy coconut broth, duck meatballs ($12) with yogurt and apricot, fettuccine with lobster, pumpkin and almonds ($26), various steaks ($28-$38) paired with potato gratin, and Mahi ($26) with pineapple, jalapeno, black beans and baby bok choy. The impressive wine list offers plenty of 2, 4, 6, or 8 ounce glasses for your enjoyment, whether to sample or pair with dinner. Wine by the bottle is also offered if you are sticking to one variety of vino.

Recently, I was fortunate enough to be in attendance at Arifai’s Special Intimate Media Dinner where my husband and I were able to see first-hand how this restaurant has reimaged itself. As a Rutgers graduate, my husband has had the “Scarlet Fever” for quite some time now and I, as his wife, have caught a case of it too. Most significantly though, the restaurant scene has captured my heart. So being that I’ve dined at almost every venue, I realize the standards that each place has to meet. And from my experience, some fall below, some hover, and some excel. To say it simply, Daryl excels.

We began the evening with many appetizers to share. The tuna tartare ($14) was executed well and beautifully plated. The fish was fresh and simple, which allowed us to admire its quality. The duck meatballs were exceptional. Juicy, seasoned just right, and portioned perfectly for a beginning course. Another star of the appetizer round was the seafood dumplings. The delicate nature of the pasta was incredible while the seafood placed inside was bursting with flavor. Not to mention, the transformative nature of the broth: it began sweet from the coconut then ended with heat and spice. It was a dish that clearly displayed Arifai’s talent and attention to detail.

The pasta course was next and again I was delighted. My favorite though was the goat cheese ravioli with wild mushrooms ($22). I feared a minimal goat cheese taste; however I was blown away by the richness and flavor each pasta pocket held. The brown gravy-like sauce which coated each ravioli was also of note; creamy, silky and deep in flavor. One other pasta dish that was quite enjoyable was the pappardelle  with venison Bolognese and crushed chestnuts ($22). A stick-to-your-ribs kind of dish that satisfied the moment I took my first bite.

Entrees hit another high mark for me. I ordered the tuna with napa and shiitakes in a ginger sauce ($26). Seared perfectly, the meat was ever so tender. Although the sides were light, they did allow for the fish to be the focus. The filet mignon ($36) my husband was served was cooked to a text-book medium-rare. The crust, or if you will, char, was simply amazing. It offered flavor yet also contrasted the inner steak very distinctly. On the side was a potato gratin, more to me like a scalloped potato though. Nevertheless, it was piping hot and oh-so-creamy. Over-salting was a slight issue with the steaks served, however I did not see this first-hand.

After clearing off our table, dessert menus were presented to us and we all, somehow, made room! And thank goodness we did, they were unbelievable! I was totally in love with my butternut squash-apple cake ($8) with walnut-raisin ice cream. The little loaf cake was beyond moist while the sprinkling of extra walnuts and raisins displayed the kitchen’s thoughtfulness when plating. The chocolate cake ($9) with peanut butter ice cream was outstanding. It was served warm and sported a fudgy molten-like middle that, when spooned with the peanut butter ice cream, created pure bliss. I was truly in awe, not only with the quality of the cake, but with the ice cream as well. The other dessert that had many smiling was the frozen mocha mousse ($9). And although I was not a particular fan, the dish was commendable in that the bottom was creamy and solid yet the top was brothy and silky. A dynamic dish that, if you’re not a traditional cake-eater, you would enjoy.

So after four courses, four hours, and probably well beyond four times saying, “Wow, that’s good,” I was very pleased with the new Daryl. Even the flow of customers on a rainy evening had me admiring Arifai’s new digs. This leads me to finish with a push for you to check out this place, make a reservation, get there early to enjoy the wine room, and sit back for an excellent meal.
