Say Ciao to Spuntino Wine Bar and Italian Tapas

Spuntino Wine Bar opened in Clifton in the spring to the pleasure of locals and wine lovers. The well-appointed space is divided into a lounge area with table and bar seating and a comfortable dining room with an open kitchen concept. For small groups, there are even private rooms.

Spuntino offers an affordable and creative wine list, including 42 Italian wines by the glass and a reserve wine list of stellar, sought-after bottles. “We feature more than 100 Italian wines at Spuntino. Our wide selection gives our visitors countless options, and we have a highly-trained team to help our guests select the right glass of wine for their tastes, or the perfect pairing of wine and tapas for any occasion”, says Dan Sliwinski, Manager, Spuntino.

The extensive menu offers tapas, small plates meant to be shared by dinner guests.  The portions are larger than typical tapas and the options feature some old school favorites and creative, modern fare.

On a recent visit, my party sampled a plate of Salumi and Formaggi, cured meats and cheeses, which was excellent.  Diners can mix and match meats and cheeses and have the option of one selection for $4, three selections for $10 and ten for $18. We opted for ten meats and cheeses and the serving was more than enough for four guests. Some of our choices were the Prosciutto di Parma – aged for 18 months, the Fontina – served with honey and the Hot Sopressata – from Central Italy. All were served with perfectly grilled crostini.

Antipasti ($5) range from an assortment of olives to pan-seared goat cheese wrapped in Mortadella to mussels in white wine sauce. There are nine bruschetta variations (one for $3, three for $8 and five for $14) mounded with perfect toppings like Ricotta cheese and roasted grapes, goat cheese and caramelized onions and Gorgonzola cheese, apple and walnuts.  One option is better than the next.

Can’t-miss fried choices ($6) are the Arancini – fried risotto balls filled with peas and Mozzarella and the Carciofo – fried artichoke hearts served with tangy lemon aioli.  The Arancini are ultra-crunchy on the outside with gooey, creamy risotto on the inside – a truly delectable treat.

Meatballs ($6) are king at Spuntino and come three to an order.  There is a classic version served with either a rich tomato sauce or a spicy marinara sauce, our favorite. There are pork, chicken, vegetable or lamb variations to satisfy the cravings of all meatball enthusiasts.

Spuntino showcases five pastas ($8) and our party’s favorite was the Perciatelli Con Pesto – thick spaghetti with rich, herbaceous pesto sauce.

Pizzas are thin-crusted and hand-stretched and range from a simple basil and Mozzarella Margherita ($9) to a decadent and meaty Salumi ($11) topped with Prosciutto, crumbled sausage, Capocollo and Cacciatorini.  The Salumi pizza is a must-try and truly one of the best pizzas around these parts.

I am confident the desserts are great, but my guests and I replaced that course with additional pizza. I know that was a good call on our part.

Food served tapas-style offers diners an opportunity to sample many different dishes they might not otherwise try. Whether sharing a romantic meal or dining with a group, Spuntino is the place to be for delicious and affordable food and wine in northern New Jersey.

Joseph’s Restaurant at Renault Winery Resort and Golf

I have wanted to have dinner at Renault Winery Resort and Golf in Egg Harbor City for some time now and finally found the perfect time. The resort hosts many wonderful culinary events on their expansive grounds that include their own vineyards. Renault has wine tastings with food pairings, farm to table feasts, wine tours and wine making and many other delicious happenings throughout the year.

Renault’s vineyards have a rich history originating in France in the 1800’s with Master Vintner Louis Nicholas Renault representative of the ancient Champagne house of the Duke of Montebello, in Rheims.  I however, attended on the day of the Muscle and Classic Car Show Event. I knew I would have no problem enticing my husband and son and his friend to leave the beach with the prospect of seeing so many shiny new and vintage cars with their engines all exposed and gleaming in the sun. My husband loves to meet and talk with the owners about his 1969 “cherry red” Corvette glory days and all the work he performed on it and talk about how he longs for another muscle car project. And my son’s seventeen year old dream of owning a muscle car as soon as he passes his driving test this month. You could almost feel the testosterone pumping, which everyone knows  increases the average man’s appetite. Well, that’s what I’ve heard. I have to admit I found the car of my dreams as well, a 1960 cream and teal Corvette in mint condition. I spoke with the owners about where and when they purchased the car and if they drove it often. I thought maybe I could convince my husband to get one like it for me (I mean him) to drive.

The men stayed untill the end of the event as the owners of their respective mean machines pulled away in all their glory, some even “burning rubber” as they exited the property. I in the meantime had made my way inside the resort to Joseph’s Restaurant to select a table by the window. My husband eventually joined me sans my son and his pal (who both decided to skip dinner, kids!) and we began the part of the days’ event at Renault that I most looked forward to enjoying.

I had met Chef Matthew Miller  at the Ventnor International Farmers Market during a food demonstration. He prepared tuna sushi on a wonton crisps with a tangy slaw topper. It was delicious and I knew then that I wanted to try more of his creations. This night Chef’s Matthew Miller and Al Roberts were in the kitchen and I was ready. My hungry husband and I decided to try two of their award winning red wines and we were not disappointed. Both were full bodied and delicious. I am not a wine expert but I enjoyed them immensely as did my husband.

We both chose a salad to start as our primi, Burrata Mozarella with vine ripe tomatoes and twelve year old Balsamic vinegar and fresh basil for me and romaine hearts with creamy parmesan, croutons and finished with shards of parmesan and freshly ground black pepper for him. What’s not to like? All fresh and seasoned perfectly. I decided I also wanted a Flatbread, which was crisp and topped with some of my favorite bites, Kalamata Olives with Fresh Mozzarella and Roasted Tomatoes and Arugula before our main course.

Tortelloni with Cheese with Imported Prosciutto in a Blush Sauce and my husband’s selection of Double Cut Pork Chops with Saba (aged vinegar made from red wine), Cippolini Onions, Herbs, Potatoes Gratin and fresh Carrots. The double cut pork chops were juicy and tender, which is hard to find and much to my husband’s delight with delicate potatoes and tender onions. My tortelloni were cooked just right, (a major pet peeve with me) and well crafted with a creamy cheese center. I loved the blush sauce and the imported Proscuitto gave the dish a nice smokey undertone.

The dessert cart held rich sweet temptations. As full as we both were we decided to try the Apple Gallette with vanilla ice cream and caramel sauce with glazed pecans. The pastry was buttery tender and struddle like with just the right crispiness, a great pairing to go with my Cappucino finish. I will definately be back and make sure to look for one of their other food and wine events coming up. It’s location minutes from Atlantic City makes it a great place to stay and be able to visit the beach and casinos as well. Bella Campania, Hillsdale – Chef Tarta’s Labor of Love

Supporting small business is something I strive to do and family-owned restaurants are a category I hold dear.  I visited Bella Campania recently in nearby Hillsdale after an absence of a few years.  I was pleasantly reminded of what I enjoyed on my earlier visits with husband and kids in tow.  While the kitchen was slammed (7PM on a summer Thursday evening) and nearly every table occupied, 30 year old Chef Chris Tarta was keenly focused on not only take out, but warmly greeting customers as they entered and exited while manning the kitchen nearly solo.  Tarta is a determined guy, buying Bella Campana at the ripe age of 23 when then-owners planned to sell the restaurant and he was a sous chef.

This BYOB is easy to like, even love.  Easy on the wallet, family-friendly and with a laid back vibe, this casual eatery is all about homemade.   Tarta resists short-cuts and buying things he could make better himself.  Meat is ground daily on premise for meatballs and sausage, tender and flavorful; mozzarella is made fresh each day and delicate pastas are made by hand as well.  The homespun quality of the menu extends to the restaurant’s decor, which is paper-topped tables, terra cotta colored walls adorned with an array of framed black and white photos of Tarta’s hands making mozzarella, plated dishes and the like.

Daily specials, reasonably priced, are available seven days.  Sign up through Facebook on Bella Campania’s page for news about coupons and discounts, as patrons at the table next to us suggested.  They came from Woodcliff Lake and were regulars, visiting weekly for the early bird specials mixing a protein, carb and veggie for about $12.

We split a variety of apps and agreed that this was Bella Campania’s big appeal.  While entrees beckoned, we liked the idea of a variety of small plates to experiment with and appease the kids’ (ages 17, 13 and 10) tastes.  Margherita Pizza ($16) was delicious.  The crust was thin and crispy, but the sauce was what impressed the most.  Plump, hand-broken sweet plum tomatoes with a dash of fresh garlic, salt and olive oil made this sauce beautifully balanced.  With just enough mozzarella cheese on top to not overpower the delicate tomatoes and a generous sprinkling of fresh basil, this was pizza to love.  Antipasto Plate ($10) was laden with prosciutto, smoked peppers, marinated sun dried tomatoes, Tarta’s delicious, perfectly salted, tender mozzarella and a bit of greens.

Our server Joe recommended Fried Calamari ($10) in the Portugese style (as opposed to traditional, Buffalo or Balsamic varieties).  This was a winner.  The crispy calamari had a fresh, briny flavor and delicate texture underneath a bit of crunch left over by flash frying.  Tarta tossed it with a garlicky lemon butter mixture of julienned smoked and sweet peppers and chopped parsley for a flavor-packed mouthful.  This was everyone’s hands-down favorite.  From texture, taste and addictive quality, Fried Calamari Portugese is a clear winner.

Salads and soups are prepared lovingly and have a homey goodness to them.  My daughter loved the Pasta Fagioli ($5) with its simple, honest flavors of tomatoes, garlic and beans.

Bella Campania is just right for a family outing, date night or night out with friends.  A bridal shower was being planned at another table, with intentions of renting out the restaurant for a fall afternoon.  Because it holds 55, the restaurant can be intimate.  In our case, I was happy to strike up conversations on either side of me with other patrons, everyone quite satisfied and dedicated to Tarta.  In spite of the bustling atmosphere, there were couples engaged in quiet conversation over bottles of wine at their two tops.  A table with four men groaned with beer and hearty portions of pasta, beef, chicken and seafood.  Bella Campania’s appeal extends beyond the tasty, well-priced menu items.   Visiting makes you feel like you are doing good for a hard-working chef who is doing good for you.  And that is worth the trip alone.

Jackpot for Food Bank

Hunger relief hit a jackpot in Atlantic City last weekend with a $10,000 donation during the Atlantic City Food and Wine Festival.

Festival hosts Caesars Entertainment Atlantic City gave the funds to the Community FoodBank of New Jersey on the runway during the Sweet & Stylish dessert party and fashion show on July 28.

“In addition to incredible ways in which our participation facilitated discussions about our cause and promotion of our brand, the donation will help us feed families who are struggling right now. Generally speaking, we’ll be able to provide ten times the amount in food for our hungry neighbors,” said Richard J. Uniacke, director of marketing at the Community Food Bank of New Jersey. “It felt very cool to be up there right after a fashion show and chat with famous chefs backstage. I’ve accepted donations before, but this was particularly cool.”

Ninety five percent of all monies donated to the organization is put into helping people and programming.

The Community FoodBank of New Jersey, a member of Feeding America, distributed 39 million pounds of food in the last year, helping to feed 900,000 people in need in 18 of New Jersey’s 21 counties.  Its staff and volunteers fight hunger and poverty not only through the distribution of food and grocery products, but by education and training, and by creating new programs to meet the needs of low-income people.

“The money is unrestricted,” said Anthony Guido, director of public relations and communications, Community FoodBank of New Jersey. “We do say for every dollar in our operating budget we can turn that into close to ten dollars worth of food.”

In addition to accepting the generous donation, the Community FoodBank also had four staff members from its Community Kitchen and several recent graduates of the Food Service Training Academy take part in a pair of food events.

They presented summer pudding with roasted stone fruit tarts at Saturday night’s Sweet & Stylish fashion show, where Southern Branch Executive Director Margie Barham and Mr. Uniacke accepted the $10,000 check from Joseph Giunta, vice president of non-gaming operations for Caesars Entertainment and Katie Dougherty, director of public relations for Caesars Entertainment in Atlantic City.

Community FoodBank chefs and recent training academy grads also presented dishes at both the Define Cheese Steak event.

“The Community FoodBank of New Jersey greatly appreciates the financial and promotional support that the festival has provided, as well as the opportunity to show off our culinary skills,” said Richard Uniacke, the FoodBank’s Director of Marketing.  “This was a terrific opportunity for our staff and recent graduates, who earned valuable high-end experience.”

Giving back to their communities is a priority for Caesar’s Entertainment.

“We play a large role in the communities where we are privileged to operate. That means we have a responsibility and unique opportunity to effect positive change,” said Ms. Dougherty. “This is something we embrace.  We believe that our business success is inseparable from the success of our initiatives to strengthen the economic, social, and cultural fabric of our home towns and cities. So we invest in those initiatives.”

Additionally, the FoodBank’s Grains for Good bagel crisps were on sale at the Grand Marketplace throughout the weekend.

Jessie Creek Winery in Cape May Court House

If you find yourself on the way to Cape May, a stop at Jessie Creek Winery is a must!

Jessie Creek Winery, 1 North Route 47 in Cape May Court House, is one of New Jersey’s newest wineries.  Jessie Creek opened in April 2012, but the vineyard was established in 2002.  Co-owners Bruce Morrison and Art Reale made their first vintage in 2010, but were caught up in the red tape of New Jersey’s Wine Shipping Bill which forced them to cellar their wines for nearly 15 months!

But don’t worry, Jessie Creek wines are worth the wait!  Nestled between the Atlantic Ocean and the Delaware Bay, the winery enjoys a micro mini climate that extends the grape growing season, allowing for flavorful varieties of Merlot, Cabernet Sauvignon, Chardonnay, and several others.  This climate combined with the sandy soil of the shore provides a little piece of Italy right in the heart of South Jersey.

Right now Jessie Creek offers 5 wines, two whites and three reds.  I am glad to see that this new winery decided to go for quality over quantity.  Morrison and Reale have worked closely with several established wine makers in New Jersey to carefully craft their first vintage.  And it shows.

Pinot Grigio – Deep-golden in color, floral and dry.  $15

Chardonnay – Fermented in oak for 6 months and then moved to steel.  Crisp with a mineral finish.  $15

Chambourcin – My favorite from this winery!  Dark berries with a kiss of oak.  This rivals any Chambourcin in the state.  $15

Merlot – Notes of cherry with of burst of herbs on the finish.  Another impressive wine!  $15

Cabernet Sauvignon – This Cab Sauv hits all the right notes.  A fine example of the grape.  $15

The winery is located on the grounds of The Inn at Jessie Creek, an elegant bed and breakfast in a beautifully renovated 1846 farmhouse.  Choose from 4 large suites all with private baths, TV, and high speed internet.  Just imagine enjoying an evening bonfire with a glass of wine or sunrise over the vineyard.

Food Bank Partners with Campbell Soup to Market Peach Salsa

The Food Bank of South Jersey and Campbell Soup Company have teamed up to create Just Peachy salsa, made from New Jersey peaches. The new product is expected to raise more than $100,000 for the Food Bank’s nine hunger relief programs.
Campbell’s culinary team created the salsa recipe that uses peaches grown by farmers in the Eastern ProPak Farmers’ Cooperative of Gloucester County, N.J. Because of their size and blemishes, these peaches cannot be sold and would ordinarily be discarded in landfills. Campbell is donating product costs and has engaged hundreds of employee volunteers to make and package the salsa.
“This is great example of how companies can truly make a difference in their communities by applying their expertise and the skills of their employees,” said Dave Stangis, Vice President, Public Affairs and Corporate Responsibility. Stangis says the program will save farmers landfill costs and provide the Food Bank with a future model for sustainable revenue.
“It’s a win for local farmers, a win for the community and a win for the Food Bank of South Jersey,” said Val Traore, CEO of the food bank. Traore says the program will fund several hunger relief programs that help more than 171,000 people, including 57,000 children.
Anthony Yula of Summit City Farms in Glassboro, N.J., says the destruction of peaches is sad. “This project is fantastic for growers,” said Yula. “What farmers most want is for our produce to be enjoyed.” Just Peachy salsa uses nearly half a pound of fresh peaches per jar and also includes crushed tomatoes, jalapenos, onions, cilantro and garlic.

A Very Sweet Event at AC Food & Wine Festival

Sweet treats and many New Jersey bakers were on display at the Sweet & Stylish event at the Atlantic City Food & Wine Festival held at Ceasar’s Atlantic City Hotel & Resort.

The event also included a fashion show and lots of liquor samples. With my sweet tooth, I was in seventh heaven along with my friend and fellow foodie Michelle Maskaly, who is better known as “The Adirondack Chick.”

By far, our favorite dessert was a green tea meringue nestled in a pool of yuzu cream from Philippe Chin French Asian Bistro in Somers Point. Yuzu is a Japanese fruit that tastes very similar to a lime. The light and flaky cookie and fluffy creme was a zesty, tart and refreshing change from cupcakes and tarts offered by the other bakers.

Now, I’m not saying there’s anything wrong with cupcakes. After all, The House of Cupcakes–a Food Network Cupcake Wars winner–in Princeton was our sponsor for the weekend. Everyone knows I am a huge fan of their light and fluffy cake. I even discovered a new cupcake flavor of theirs to love-orange creamcicle.

Orange creamcicle seemed to be the flavor of the night with two of the liquor vendors offering samples of their orange alcohols. Licor 43’s Dreamsicle, made with the vanilla and citrus-flavored liquor, orange juice and milk, was very creamy and delicious with the dairy cutting the pungency of the alcohol itself. The second had a very strong alcohol flavor that overpowered the citrus and very little creaminess.

The cupcakes from Dumont-based Sweet Indulgences, also a Cupcake Wars competitor, were dense and had a bittersweet chocolate flavor.

Tonnie’s Mini’s, from Harlem, were a bit too moist and seemed a bit oily. But, Tonnie’s had the most beautiful display with a four-tier, ocean themed cake decorated with lots of intricate coral, starfish and sea creatures sculpted from multi-colored fondant.

My other favorite sweet of the night was also a bit savory. It was a chocolate heart with bacon by Nadia G., co-creator, writer and host of Cooking Channel’s “Nadia G’s Bitchin’ Kitchen.” Yes, bacon and chocolate. And it was amazing. The salt and the chocolate balanced beautifully.

One of the highlights of the night for Michelle, a former professional bar tender, was the Reposado tequila from the Sauza family’s Tres Generaciones. She really liked how smooth the premium blue agave liquor was because of its triple distillation and four months of aging in oak barrels, which made it very easy to drink on the rocks.

The fashion show was co-hosted by Nadia and Hoboken’s Buddy Valastro, of Carlos’s Bakery, which is featured on TLC’s “Cake Boss.” Nadia was right at home on the runway and did a fantastic job announcing the fashions from bebe, but Buddy seemed a little out of place, and compared the metal decorations on a dress to the draping of cake frosting. The highlight of the show was when the bakers got to strut their stuff on the catwalk and have the spotlight with a special guest appearance by Southern cuisine queen Paula Deen, who also loved Nadia’s bacon filled chocolate.

There were two downsides to the night, which cost $85 to attend from 8 to 11 p.m. First was the treats seemed to disappear very quickly. At least a couple of booths, including House of Cupcakes and South River-based 2 Chicks with Chocolate, were cleaned out within the first hour. Second, the music was very, very loud to the point where conversation with the bakers and other guests was difficult.

Kabab Paradise in Lake Hiawatha – Halal Food and Beyond

Kabab Paradise is a spotless, take-out and eat-in restaurant featuring succulent Afghan dishes in Morris County.  Using an interesting combination of charcoal and lava rocks as the flame and heat source for its busy grill, this restaurant is known to stop traffic in its tracks on bustling Beverwyck Road with the incredible aromas it exudes.

Chef Sal Fahim and his friendly staff greet customers warmly as they arrive and treat them like extended family as they dine in the cozy space.  Hearing ‘the ususal?’ being asked by the cooks to the diners is typical as Kabab Paradise has boasted a very loyal following since it set up shop in Lake Hiawatha in 2004.

Beyond the friendly staff is the fresh and absolutely delicious food.  Kabab Paradise offers an extensive menu of made-from-scratch dishes, including many Halal options, prepared using quality ingredients. From the very tasty hummus to the hand-chopped burger meat to the fabulous skewered entrées, Kabab Paradise does it well.

On a recent visit, my party enjoyed an attractive platter of hummus ($3.99 for small and $6.99 for large), made on the premises.  The small portion, enough for two diners, is beautifully presented with just the right amount of fruity olive oil.

Some of the entrées we enjoyed are the beef kufta kabab platter ($10.99), the mixed gyro platter ($8.99) and the chicken breast kabab ($11.99).  The juicy beef kufta kabab is made of broiled ground beef marinated in secret spices and absolutely wonderful in every way.  The mixed gyro platter is comprised of thinly sliced, then chopped, beef, chicken and lamb expertly seasoned and presented in a generous portion.  Do not expect typical dried out grilled meat on a stick at Kabab Paradise.   The grilled options are a revelation of moist, tender, flavorful and perfectly broiled meats.

Entrées are presented with a large serving of seasoned basmati rice, a choice of beverage, bread and a tasty, tart cilantro and lime dressing.  You will want to pour the secretly-prepared dressing over just about everything.  Warning – it is highly addictive and you will dream about your next taste daily.

Beer, BBQ Lovers Brave The Heat at Atlantic City Food & Wine Festival

If you like your pulled pork with a side of sweat, Saturday’s Blues, Brews & BBQ Festival at the Atlantic City Food & Wine Festival was the place for you. Beer Bites Editor, Peter Culos, and I fought the heat with the rest of the loyal beer and barbecue fans to sample some of our area’s best bites and of course, get a quick glimpse at two of my favorite Food Network Stars, Paula Deen and Tyler Florence.

Despite the heat and sweat pouring down my back, we were able to make our way around to sample some good beer and some mighty fine ‘Cue. The best part about these events for me is meeting the owners and chefs who are so passionate about their restaurants and their food. I chatted for a while with Bob, from Bitter Bob’s in New Hope who told me the big reason he opened his restaurant was that he couldn’t find any good barbecue in his area. We also talked about how hard it is to make everyone happy when it comes to barbecue, because we all have our own definition/preference of what sauce is the “right sauce.” After sampling his Pulled Pork over Mac & Cheese, I can testify he’s done his homework. Their dish was probably my favorite of the day.

Local Smoke BBQ from Cookstown and Neptune City, New Jersey were there with their stuffed jalapeno popper wrapped in smokey bacon. This was a favorite bite for me as well. You might remember them from the Barbecue Competition at Monmouth Park last year. They also recently competed in the New Jersey State Barbecue Championships in Wildwood. I was a judge at the Monmouth Park event, and still have dreams about their barbecue chicken.

Some of the other participants included Rosey’s BBQ from Ambler, Pennsylvania with Chef Chad Rosenthal at the grill. Rosey’s served up a Sliced Smoked Turkey sandwich that was a nice change from all of the barbecue sauce slathered meats being served.

Chef Zakary Pelacci,  the award-winning Chef and Founder of the Fatty Crew, which owns and operates the critically-acclaimed restaurants Fatty Crab and Fatty ‘Cue, was serving up Pork Burgers and Lamb Burgers at the Amstel Light booth. (Amstel Light was the official sponsor of the event.)

Tuckahoe Brewing showed up with their Marshallville Wit which you would expect in the summer but then made the gutsy call to pour their Steelmantown Smoked Porter along side it. It was oaky and peaty and well suited to anything a barbecue could conjure up. The liquid version of hardwood charcoal. I’ve developed a taste for the spicy flavor of rye beers lately and Turtle Stone’s is a great example. However, their American Stout was roasty, smooth and dry enough to cut through the inevitable fat you will encounter with any barbecue fare. Boaks had a bunch of beers but the Wooden Beanie had to be the best. Dry vanilla goodness just begs for barbecue! Jersey’s biggest craft brewer, Flying Fish poured the expected summer offerings, but I was happy to see their Abbey Dubbel on the table. It’s what you expect from the style; cherries, raisins, and some brown sugar. I’d like to use it in a barbecue sauce. These may seem like unlikely beers for a blistering summer day, but they aren’t as heavy as you think and barbecue never tasted better!

A Toute Heure in Cranford

Though it’s only five years old, A Toute Heure in Cranford has been consistently recognized as one of the best restaurants in New Jersey. This past June the restaurant was given yet another accolade when it was voted the 2012 Nature’s Plate Award People’s Choice Winner for New Jersey. The award, sponsored by The Nature Conservancy, honored restaurants across the nation whose cooking incorporates organic, local, in-season, and sustainably managed ingredients. Though it can be a challenge at times, A Toute Heure manages to reflect these qualities with every meal it serves, from the heat of summer to the dead of winter.

Andrea and Jim Carbine, the owners of A Toute Heure, have done their best to stick to one simple mantra since opening day: “Honor the nature of the source.” Andrea grew up in Seattle where Pike’s Place Market would overflow with fresh ingredients 11 months a year. NJ’s mercurial growing seasons were a bit difficult to adapt to as a wide range of products are available at most 8 months a year. Once the restaurant’s mission statement was clear Andrea began to establish relationships with sources throughout the region. Over time the restaurant’s reputation grew and people began to seek out Andrea with ideas for products or ingredients they thought she could use. A list of sources that started off at 2 has now grown to 70 and includes everything from beekeepers to Small World Coffee in Princeton.

The restaurant isn’t limited to what it can purchase at the greenmarket as Andrea and Jim also maintain Jack’s Run, a 4,500 square foot garden only a few blocks from the restaurant. In the high season of June through October the restaurant can get nearly 70% of its produce from Jack’s Run. Though Andrea started off as the head chef for A Toute Heure when it first opened she’s now passed the reins to Kara Decker, who previously worked as the Executive Chef at Chez Catherine in Westfield. Andrea is now responsible for compiling a list of the ingredients based on what she can acquire from Jack’s Run and her sources. Once Kara and her crew have Andrea’s list they’re free to brainstorm and put their creative spin on it.

A Toute Heure’s appreciation of the region is evident not only in the dishes they put out, but in their attempts to highlight the quality that can be found throughout the Tri-State area. Recently the restaurant has gone a step beyond providing delicious food by offering classes that connect vendors with customers. A mozzarella-making class with the Caputo Brothers Creamery was such a hit that a second class is already being planned. The restaurant is hoping to repeat this success with other vendors and provide its customers with hands-on experiences that illustrate the hard work and care that goes into so much of the food at A Toute Heure.

EARTH Center Garden Field Day | Open House, Saturday, August 18th from 10am-3pm. South Brunswick, NJ. This is a chance to join Farmers Against Hunger and help local farmers donate fresh produce to area soup kitchens, food pantries, and those in need. There will be a lot going on at this big event. The Extension Agriculture Department as well as the County Master Gardeners will be on hand, offering sound advice on horticulture and environmental stewardship.
