The Atlantic Wine Project’s Mission to Elevate NJ Wines

For years, New Jersey’s wine industry has fought for recognition, often overshadowed by the heavyweights of California and France. But now, thanks to a bold move by The Lobby Club in Trenton, New Jersey, wines are taking center stage—proving that local bottles belong in the same conversation as world-renowned vintages.

The Atlantic Wine Project (AWP), founded by Patrick Harney, has partnered with The Lobby Club, an exclusive, membership-based, white-tablecloth establishment in Trenton’s capital district, to showcase wines that capture New Jersey’s distinct character. Under the leadership of General Manager Michael Haelig, the club made a decisive shift, replacing its entire wine inventory with selections from Jardin and Bellview Winery. The idea? “It only made sense that NJ wines should be enjoyed while breaking bread over the business of our state,” Haelig explained.

A Bold Bet on Local Terroir

This move isn’t just a novelty—it’s a statement. For years, New Jersey wines have struggled for respect, often bypassed by distributors who prioritize the more familiar labels from Napa or Bordeaux. But as Harney and his team know, the state’s coastal terroir and distinct soil produce wines that can hold their own.

Expression of Place

On a recent episode of the Trenton Waves podcast, Harney discussed this exact point over a tasting of Jardin White paired with oysters from the Barnegat Oyster Coop and a Jardin Red served alongside The Lobby Club’s signature short ribs. “The Sassos were blown away by the genuine expression of place in these wines,” Harney shared. The Jardin White is a racy blend based on Cayuga, a variety that thrives in NJ’s sandy soils, and the Jardin Red is a blend of Cabernet Franc, Chambourcin, and Blaufrankisch, all of whom find their happy place here in New Jersey. The Barnegat Oyster Collective, one of the State’s premier destinations for locally farmed seafood, chose the Jardin line and Bellview wines as the perfect complement to New Jersey’s homegrown oysters.

The conversation touched on more than just taste. Harney dove into the history of wine mapping—comparing New Jersey’s evolving industry to the meticulous work of Burgundian monks, who centuries ago mapped out vineyards based on the subtle differences in soil and climate. “They took impeccable notes on flowering, fruit set, and ripening,” Harney explained, “and over time, they figured out which plots made the best wines. We’re doing the same thing in New Jersey.”

A Shift in Perception

Despite growing acclaim, New Jersey wines still face an uphill battle. Harney notes visits to a number of Farm to Table restaurants in North Jersey with “Not one Jersey wine on the list,” he noted. “Everything was California and France. Why is farm-to-table dining so popular, but local wine isn’t?”

The stigma, Harney suggests, comes down to marketing and distribution. For years, big distributors have controlled what gets placed on restaurant wine lists, prioritizing mass-market brands over small, independent wineries. “At the end of the day, I want to be the guy bringing the best wine to the table—whatever it is, at an affordable price point,” Harney said.  “Some of it is empirical. Some of it is just… you know it when you taste it.”

Jersey Wines at the Table Where It Matters

With The Lobby Club embracing homegrown vintages, the perception of New Jersey wines is shifting. And the momentum is building with industry insiders—from statehouse officials to wine enthusiasts—experiencing these bottles firsthand. “This is terroir in the making,” Harney said. “It’s the interaction of people, soil, and climate, saying: ‘This is us.’”

As AWP and The Lobby Club continue to push boundaries, one thing is clear—New Jersey wines aren’t just worthy of a seat at the table. They’re here to stay.

Golden Harvest Bowl Honors Black History Month and Chef’s Roots

The Golden Harvest Bowl (Recipe Below)

In celebration of Black History Month, Marcus Live! Bar & Grille at American Dream is paying tribute to the vibrant culinary traditions of the African diaspora with a dish inspired by the bold, soulful flavors of Jamaica. Created by Chef Ernest Bent, who leads the kitchen alongside Marcus Samuelsson, the Golden Harvest Bowl is a heartfelt nod to his childhood in Jamaica—where rich spices, fresh herbs, and deep-rooted traditions shape every meal.

“This dish brings together the earthy richness of chickpea puree, the crispy sweetness of fried yams – a nod to the beloved ‘sweet potato’ often served in Jamaican households – and the deep umami of caramelized onions,” said Bent. “It’s a dish that’s both comforting and exciting, with layers of texture and flavor.”

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • Juice of ½ lemon
  • ¼ cup water or Coconut milk ( as needed for consistency)
  • Salt and pepper to taste
  • FRIED YAMS:
  • 2 medium yams, cut into wedges or cubes
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 cup vegetable oil (for frying)
  • CARAMELIZED ONIONS:
  • 1 large onion, thinly sliced
  • 1 tbsp butter or olive oil
  • 1 tsp brown sugar (optional)
  • 1 tbsp balsamic vinegar (optional)
  • PEANUT CHIMICHURRI:
  • ¼ cup roasted peanuts, finely chopped
  • ½ cup fresh parsley, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 clove garlic, minced
  • 1 tbsp red wine vinegar
  • 3 tbsp olive oil
  • ½ tsp red pepper flakes (optional)
  • Salt to taste
  • FRIED SHALLOTS:
  • 1 shallot, thinly sliced
  • ½ cup vegetable oil (for frying)
  • GARNISH:
  • Fresh parsley, cilantro

Instructions

    Make the Chickpea Purée

  1. In a food processor or blender, combine chickpeas, olive oil, garlic, cumin, paprika, lemon juice, and salt.
  2. Blend while slowly adding water until smooth and creamy. Adjust seasoning as needed.

Fry the Yams

  1. Heat vegetable oil in a skillet over medium-high heat.
  2. Toss yams with salt, pepper, and paprika.
  3. Fry in batches for about 5-7 minutes, flipping occasionally, until golden and crispy. Drain on a paper towel.

Caramelize the Onions

  1. Heat butter or olive oil in a pan over medium-low heat.
  2. Add onions and cook slowly, stirring occasionally, until soft and golden (about 20-25 minutes).
  3. Optional: Add brown sugar and balsamic vinegar for extra depth.

Make the Peanut Chimichurri

  1. In a bowl, combine chopped peanuts, parsley, cilantro, garlic, vinegar, olive oil, and red pepper flakes.
  2. Stir well and season with salt to taste.

Fry the Shallots

  1. Heat vegetable oil in a small pan over medium heat.
  2. Fry sliced shallots until crispy and golden brown (about 3 minutes). Drain on a paper towel.

Assemble the Golden Harvest Bowl

  1. Spread a generous scoop of chickpea purée on a plate or bowl.
  2. Arrange crispy yams on top.
  3. Spoon over caramelized onions and peanut chimichurri.
  4. Sprinkle with fried shallots and fresh herbs.
  5. Serve warm and enjoy!
Experience the Golden Harvest Bowl at Marcus Live!

Don’t feel like cooking? Then, take a drive to Marcus Live! during Black History Month and enjoy a dish that honors tradition, culture, and bold Jamaican flavors. The Golden Harvest Bowl is available for a limited time throughout February.

Note: Jamaican sweet potatoes, known for their red or purple skin and creamy, pale yellow flesh, have a slightly drier, starchier texture than the orange-fleshed sweet potatoes commonly found in the U.S. Their subtle sweetness and firm consistency make them perfect for frying, roasting, or mashing in traditional Caribbean dishes. If you can’t find Jamaican sweet potatoes, Japanese sweet potatoes or boniato (a Cuban white-fleshed sweet potato) are excellent substitutes, as they share a similar texture and mild sweetness. If needed, regular orange sweet potatoes can also work, though they will be softer and sweeter in comparison.

10 Must-Try New Jersey Pizza Spots to Visit in 2025

National Pizza Day 2025 just happens to fall on the same day as a very popular football game. That might take the fun out of venturing out to your favorite spot—unless, of course, you’re a NY Giants fan like me and can’t bring yourself to watch the Philly football team. Or maybe you just don’t want Taylor Swift in your life anymore. Don’t worry—I’ve got your travel plans covered.

Allow me to introduce myself. I am ThePizzaHulk, a nationally recognized pizza influencer. OK, that might be a bit much, but for real—I was featured in PMQ Magazine as a top pizza influencer of 2024. I’m here to offer you 10 New(ish) Pizza Spots you need to check out in 2025.

What are the criteria for being on this list, you ask? I’ve picked 10 spots that are new to the NJ pizza scene but are already making a name for themselves—some I’ve been to, some I haven’t—but I’m putting my pizza reputation on the line and recommending them anyway!

Come along for the ride, and be sure to follow me on my pizza journey: @thepizzahulk on Instagram, Facebook, YouTube, Spotify, and Apple Podcasts. I also host a weekly pizza podcast highlighting my excursions, called Smashing Slices.

Add these pizza joints to your bucket list for 2025.

  • Bucky’s – Chatham, NJ
    ? @buckysnjpizza
The undisputed new kid on the block, Bucky’s is slinging some of the best pizza in the state, less than a year into their official pizza journey. They started as a pop-up and have now found a home in Chatham. Bucky’s has put the entire state on notice with elite-level Detroit-style squares.
Casano’s Pizza Parlor
  • Casano’s Pizza Parlor – Rutherford, NJ
    ? @casanospizzaparlor
Owner Dave is no newcomer to the NJ pizza scene, but Casano’s is! They’re bringing ‘80s Grandma’s house vibes—think phone booths, pull-arm cigarette machines, and floral couches. But here’s the catch: No slices—only pre-orders. They even host pop-ups with NJ pizza legend Al Santillo.
Emilio’s Wood Fire Pizza
  • Emilio’s Wood Fire Pizza – Nutley, NJ
    ? @emilios_woodfirepizza
Neapolitan wood-fired pizza has become one of my favorite styles over the past year, and not many people in the biz are doing it like Emilio’s. They feature a bar pie called “The Lisa”, and it’s an absolute game-changer.
Francesca’s Pizza/Squared
  • Francesca’s Pizza – Elmwood Park, NJ
    ? @squarednj (Ghost kitchen inside @franpizzanj)
A secret ghost kitchen located inside a pizzeria? YES, SIGN ME UP! @squarednj is pumping out top-tier Detroit-style pizzas. If you haven’t noticed, Detroit-style is something to take seriously. Follow them on social media and order one immediately—thank me later.
L’Olivia
  • L’Olivia – Farmingdale, NJ
    ? @lolivia_pizzeria
A lifelong pizzaiolo finally took the leap and opened his own spot—and he hasn’t looked back. L’Olivia, named after his daughter, is bringing the flavor with every round pie he’s pumping out. He’s putting Farmingdale on the pizza map.

  • Meli’s Thin & Crispy Pizza Co. – Marlboro, NJ
    ? @melispizzaco
Thin & Crispy—it’s right in the name, and yes, it’s speaking to me. I’ve never really heard much about Marlboro, NJ, but Meli’s is trying to change that. I might need to update my Google Maps, and maybe you should too!

  • Pizzeria Lucci – Belmar, NJ
    ? @pizzerialucci
Pizzeria Lucci is quite possibly the hottest spot in the state. It’s extremely difficult to grab a seat, but when you do, you’ll be blown away by what is presented to you. If you’re lucky enough to get in—call me, I STILL NEED TO GO!
Slice Shop
  • Slice Shop – West Orange, NJ
    ? @bagelsnyjarrett
Yes, BXJ was featured on this same list last year—but that was for his bagel shop pizza. Now he’s officially entering the pizza scene with Slice Shop. And in true BXJ fashion, it’s going to be a scene.

  • Squares and Fare – Somers Point, NJ
    ? @squaresandfare
Another double-featured spot on this list! This new brick-and-mortar shop has officially opened, serving some of the absolute best square pizza you will find ANYWHERE. Somers Point is calling your name.
The Pizza Project
  • The Pizza Project – Montclair, NJ
    ? @thepizzaprojectnj

Masseria Italian Steakhouse: Morristown’s Hottest New Restaurant

Masseria Italian Steakhouse in Morristown has officially opened. After our exceptional dinner there on Sunday, I found it hard to believe the restaurant had only been open for five weeks. The ambiance feels timeless—elegant but inviting, refined yet comfortable. From the plush yellow upholstered chairs to the crisp white linens, every detail exudes warmth. The carefully chosen lighting and ambient glow create an intimate, romantic setting, making it the kind of place where you linger over a glass of wine and the perfect setting for Valentine’s Day.

Chef's Room at Masseria Italian Steakhouse
The Chef’s Room at Masseria Italian Steakhouse
The layout is just as striking as the décor. The Library Room and Chef’s Room each have their own unique charm, with the latter offering a panoramic view of the bustling kitchen. However, my eyes were immediately drawn to the bar—an absolute showstopper. It’s the ideal spot to enjoy a perfectly crafted cocktail or a bold espresso after a luxurious meal. Adding to the atmosphere, the bartenders and servers dress in crisp white coats, exuding a classic charm that elevates the entire experience.

The Cocktails

We enjoyed two standout drinks that perfectly complemented the evening. The Masserita Fume served in a coupe glass, was a sophisticated take on a margarita featuring Cazadores Blanco tequila, lime, Cointreau, and agave, shaken and garnished with a unique salt mezcal foam that added a smoky depth. Meanwhile, the Bramble On was a beautifully balanced whiskey cocktail, made with Redemption Rye, blackberry syrup, lemon juice, and fresh mint, garnished with a blueberry, mint, and a cinnamon stick for a warm, aromatic finish. Both cocktails showcased the bar’s commitment to quality ingredients and expert craftsmanship.

The Food

Grilled Octopus
Pulpo

We started with the Pulpo-grilled octopus served over a Tuscan bean ragu with broccoli rabe, creamy chorizo, and basil oil. Grilled octopus can sometimes be tricky, but here, it was executed beautifully. The smoky char from the grill gave it incredible depth, and the accompanying Tuscan beans with charred broccoli rabe added a fresh, herbaceous note that balanced everything perfectly.

Beef Carpaccio
Carpaccio

Next up was the beef Carpaccio, and wow. Thinly sliced, impossibly tender, and served with a tangy lemon aioli and arugula, it had just the right mix of richness and brightness. Honestly, you could eat it as a salad, too—light and utterly delicious.

Massaria's Beet Salad
Barbabietole

For our salad course, we selected the Barbabietole, which is as pretty as it is tasty. Earthy beets paired with sweet figs, creamy goat cheese, and crunchy pistachios hit all the right notes, creating a perfect balance of flavors and textures that made each bite more interesting than the last.

Massaria's braised rabbit gnocchi
Gnocchi Pâté Coniglio

Then came the Gnocchi Pâté Coniglio with braised rabbit, roasted tomato, rabbit glace, and herbed ricotta. We spotted this dish on the menu before our visit and knew we had to have it, and I’m very glad we did. The gnocchi itself was pillowy yet toothsome, a texture that can be so hard to get just right. The rabbit ragù had a subtle sweetness, punctuated by the acidity of roasted tomatoes that tied everything together beautifully.

Steak at Massaria in Morristown
12 oz. Snake River Farms Gold NY Strip—American Wagyu

Of course, at a place that calls itself a steakhouse, you have to order steak. We opted for the 12 oz. Snake River Farms Gold NY Strip—American Wagyu—and it did not disappoint. Seasoned simply with sea salt, the real magic came from the restaurant’s state-of-the-art Mibrasa grill, imported from Spain. The grill uses a blend of 20% charcoal and 80% oakwood, ensuring optimal heat control for an exceptional cook. The result? A steak with an impeccable smoky flavor, a beautifully developed crust, and a juicy, tender interior. It’s a masterclass in letting quality ingredients shine, elevated by expert technique and top-tier equipment.

16 oz. Snake River Farms Kurobuta pork chop Dry Giambotta at Masseria Italian Steakhouse
16 oz. Snake River Farms Kurobuta pork chop Dry Giambotta

But the real showstopper of our night at Masseria Italian Steakhouse was the 16 oz. Snake River Farms Kurobuta pork chop Dry Giambotta. This dish was next-level: a thick, juicy pork chop grilled to perfection, paired with Italian sausage, long hot peppers, crispy potatoes, and fresh herbs. Every bite was bold, hearty, a little spicy, and packed with flavor. It was one of those dishes that demands your full attention.

Zabaglione at Masseria Italian Steakhouse
Zabaglione

Of course, dessert had to happen. We opted for the Zabaglione, a cold Italian custard served with mixed berries and mint. It was the perfect way to end the meal—light, creamy, and just sweet enough without feeling heavy.

espresso martinis at Masseria Italian Steakhouse
espresso martinis

To wrap things up, we lingered over two expertly crafted espresso martinis, which were just the right balance of strong and smooth. What appears to be shaved chocolate is actually finely shaved coffee beans, intensifying the coffee flavor with every sip.

server at Masseria Italian Steakhouse
service with a smile at Masseria

Beyond the incredible food and ambiance, the exceptional service elevated our experience to the next level. Our server, Joe, was outstanding—attentive without being intrusive, knowledgeable about every dish, and genuinely passionate about ensuring we had the best experience possible. Hospitality with a capital H.

About Masseria Italian Steakhouse

Part of Trinity Hospitality Group, Masseria Italian Steakhouse is the vision of Restaurateur and proud Morristown resident Joseph Cetrulo, who brings over 40 years of experience in the restaurant industry. In 2006, he opened Sirena Ristorante in Long Branch, the first of three restaurants. Two of them, Sirena and Stella Marina, have become beloved Jersey Shore favorites.

“We’re excited to bring Masseria to Morristown, a place that feels like home to me,” says Joseph Cetrulo. “I’ve personally created each recipe with the finest ingredients and look forward to delivering a dining experience that transports guests to the heart of Italy.”

Ultimately, Masseria Italian Steakhouse might be new, but it already feels like a staple. The combination of a beautifully designed space, a thoughtful and well-executed menu, and that unmistakable sense of hospitality make it a place worth returning to again and again. If this is what they’re doing in their first few weeks, I can only imagine how exceptional it’s going to be as they continue to refine and evolve. One thing’s for sure—I’ll be back.

Let’s start with the history because it’s pretty incredible. The Colts Neck Inn is the oldest inn in New Jersey and one of the oldest in the entire country. Think about that—this place has been around for over 300 years! Owned by the Mavrookas family, they’ve poured their heart and soul into keeping the charm alive while also giving the place a fresh, modern feel. It’s a place where you can really feel the blend of past and present.

Party Time

One of the highlights of the recent revamp is the banquet facility. If you’re planning a special event—a wedding, a birthday, an engagement party, or even a corporate gathering—this is the spot to do it. The space is elegant, flexible, and perfect for making those big moments extra memorable. Plus, the team is fantastic at customizing menus and making sure everything runs smoothly.

The Food

Speaking of menus, let’s talk about the food because the menu has had a major revamp, too. Their hand-cut steaks are legendary—some say they’re the best in Monmouth County and beyond. If you’re a steak lover, the Filet Mignon is a must-try, served with garlic mashed potatoes, grilled asparagus, and a rich cabernet demi-glace. But it’s not just about the steaks.

the CNI Cheeseburger

If you’re craving a top-tier burger, the CNI Cheese Burger is a must-try. This 8 oz. Certified USDA Beef Burger is cooked to juicy perfection and stacked with melted cheddar cheese, caramelized onions, crisp lettuce, and fresh tomato on a soft brioche bun. But what really takes it to the next level? The CNI Secret Sauce—a mouthwatering, flavorful touch that keeps you coming back for more. Served with a generous side of hand-cut fries, this burger is a perfect blend of classic comfort and steakhouse quality.

And here’s a fun twist: they’ve added a sushi program to the menu. Yes, sushi! Try the Tuna Maki Roll or the colorful Rainbow Salmon & Tuna Roll if you’re in the mood for something fresh and different.

The Drinks

Of course, no great meal is complete without a great drink. The Colts Neck Inn’s bar is stocked with all your favorites, but their specialty martinis really steal the show. The Raspberry Lychee Martini and Lavender Lemondrop are just two highlights—they’re as delicious as they are Instagram-worthy.

The Vibe

The Colts Neck Inn Steakhouse offers a dining experience that perfectly balances history, comfort, and style. The large bar area is a lively and inviting space with ample seating. Surrounding the bar, cozy booths provide the perfect spot for casual dining, whether you’re grabbing a burger with friends or enjoying a laid-back night out. Every weekend, they host live music that turns a great dinner into an unforgettable night out.

If you’re looking for something more intimate, the formal dining room sets the stage for a refined yet welcoming experience. The romantic lighting creates a warm, elegant ambiance, while the etched glass artwork depicting horse racing pays homage to Colts Neck’s rich equestrian heritage

The Colts Neck Inn Steakhouse isn’t just a restaurant. It’s a piece of New Jersey history, a place to celebrate life’s milestones, and a spot where incredible food and good times come together. Whether you’re stopping by for a casual dinner, planning a big event, or just want to soak up the atmosphere with some live music and a cocktail, you’ll leave feeling like part of the family.

The Colts Neck Inn isn’t just a restaurant to me—it’s my family’s legacy. My grandfather bought it in 1973, and it’s been passed down through the generations. After years away, I’m back to help revitalize it and bring it back to its rightful place as a Monmouth County staple. This isn’t just about business—it’s about honoring my family’s history and building a future for the next generation.” offered George Mavrookas, whose father, Lou, is the owner and operator.

So, what are you waiting for? The Colts Neck Inn Steakhouse is back and better than ever. Reserve your table and see for yourself why this historic gem is still one of the best spots around.

Montclair’s Grape Collective: A Wine Lover’s Journey

Brittney Abell, a New Jersey native with an incredible journey into the wine world, shares her story and the ethos behind Grape Collective, a unique wine shop in Montclair offering carefully curated selections. From her start at a wine bar to becoming Wine Director at Grape Collective, Brittney’s passion for wine has been her guiding star.

Brittany Abell owner of Grape Collective
Brittney Abell

“I started at a wine bar during college to make ends meet. It was survival at first, but the more I learned about wine, the more I fell in love with it,” Abell says. “I had no idea what I was doing in the beginning…but the enthusiasm of the staff and the depth of the wine world drew me in.” She credits foundational courses like WSET Level 2 and the Court of Master Sommeliers certification with sharpening her palate and expanding her understanding. Her journey has included rigorous certifications, international travel, and countless hours honing her palate—turning her passion into expertise.

A Unique Approach

Walking into Grape Collective isn’t like visiting a typical wine shop. You won’t find big brands or familiar labels. Instead, you’ll discover a carefully selected assortment of wines made by families and small producers. “Our mission is to connect people with wines that tell a story,” Abell says. “We aim to educate customers, whether they’re new to wine or seasoned enthusiasts. It’s not just about selling wine—it’s about hospitality and creating a warm, welcoming space where people feel inspired to explore.” Brittney’s approach involves helping customers build their confidence and understanding of their own palates. “We start broad—what fruits or colors do you taste? Then, we narrow it down. It’s about giving people tools to describe what they like so they can better navigate the wine world.”

A Personal Touch with Every Bottle

What sets Grape Collective apart is its mission to educate and inspire. Brittney takes a personal, hands-on approach to guiding customers, whether they’re novices or seasoned wine enthusiasts.

“I like to start broad and then narrow it down,” she says. “For beginners, I map out the store with regions and tags, then ask about their preferences. I recommend three bottles: a safe choice, a perfect match, and an outlier. It’s all about exploration.”

  • A safe choice: Something familiar.
  • A perfect choice: A slight risk based on their preferences.
  • An outlier: A bold option to expand their horizons.

“I encourage people to take notes, send me photos, and share their thoughts. It’s a collaborative journey,” she says.

Exploring Hidden Gems

Brittney’s role involves frequent travel to wine regions worldwide, including Sicily and South Africa. These trips, she says, are invaluable for understanding winemaking processes and connecting with producers. “There’s something magical about sipping a wine in the vineyard where it’s made,” Abell says. “It deepens your appreciation and helps you bring those stories back to the consumer.” Her travels have also introduced her to wines from emerging regions like Slovenia and the Czech Republic. “These regions are producing some of the most exciting wines right now. They’re sleeper hits, and I can’t wait to see more of them on our shelves.”

A Gathering Place for Wine Lovers

At its core, Grape Collective is about community. “Wine is about connection—it brings people together,” Abell says. “We want the shop to be more than a place to buy wine. It’s a space for people to gather, learn, and feel welcome.”

Whether you’re a beginner looking to expand your palate or a seasoned wine lover eager for the next hidden gem, Grape Collective offers an experience as rich and layered as the wines they sell.

A New Era for Rutherford’s Matisse 167

0

Matisse 167, named one of the most romantic restaurants in the country by Food & Wine magazine, offers a personalized chef’s experience backed by a 37-year legacy.

Matisse 167 is featured in our New Jersey dining guide highlighting the state’s best restaurants.

The Rutherford, New Jersey bistro was recently acquired by Chef Greg Power and his family, who now offer guests a prix-fixe menu that evolves and is refined month-to-month. The 43-year-old chef is eager to keep the restaurant’s impeccable reputation while also creating a completely new experience for his guests.
Chef Greg Power

“Pre-COVID, I worked in NYC for 18 years from cook to chef; I worked my way up,” said Chef Greg, whose experience and passion for the job seem to be the very essence of why a show like “The Bear” was made.

Chef Greg and his wife went out to eat at Matisse for the first time on a cold Sunday in March 2024. They met the chef, Peter Loria, and immediately hit it off. Loria was looking for someone to take over and let him retire. Sure enough, the two had a handshake deal by the following Tuesday.

The Atmosphere

The Jewel Box Room

It has not been named by numerous publications as a “Most Romantic Restaurant” for nothing. The restaurant features three distinctive dining areas: the Jewel Box main dining room, the Moroccan-inspired front dining room, and a seasonal garden patio for al fresco dining. The Jewel Box Room features crisp white linen tablecloths that add a touch of elegance to its refined ambiance, while the restaurant as a whole is known for its impeccable service, ensuring an exceptional dining experience throughout.

The Moroccan Room

Accommodating up to 20 guests, the Moroccan Room is an ideal setting for private parties and events as well as a very intimate date night.

Matisse’s Magic Garden

The garden at Matisse transforms with the seasons, offering a dynamic and ever-changing atmosphere. Each season breathes new life into the garden, ensuring it remains a captivating dining experience year-round.

The Food

Matisse serves a pre-fixe dinner menu with four courses—three savory dishes and one dessert. At every step, customers can choose from three options, all dishes that Chef Greg is consistently refining and perfecting.

“Dining here is an elevated experience,” said Chef Greg. “We offer a fine dining approach that is creative and contemporary, with a carefully curated menu of nine exceptional bistro-inspired dishes. Our menu is eclectic, blending elements of a steakhouse, seafood restaurant, and European cuisine to showcase the best seasonal ingredients. Each dish is thoughtfully crafted to bring a unique perspective, delivering a memorable culinary journey that stands out in the area.”

The Seared Octopus. One of Matisse’s signature dishes.

“The seared octopus is a Spanish dish we’re always happy with,” said Chef Greg, who is up to the challenge of cooking a perfect octopus. “We serve it with fingerling potatoes, pepper onion piperade, and lemon caper butter. It was an accident how it ended up on the menu, but now it’s not going anywhere.”

The Surf and Turf

Every dish has a similar story: The chef incorporates four or five different items in each of his creations.  “The Surf and Turf is another big seller. It’s pan-seared scallops, braised short rib, roasted baby carrots with maple brown sugar, and [vegetable] mirepoix on the plate.”

Pastrami Reuben sandwich with duck, pastrami, and coleslaw.

“We’ve got a Pastrami Reuben sandwich with duck, pastrami, and coleslaw, of course,” said Chef Greg. “We do a spicy thousand island dressing with pickles, sauerkraut, and cornichons. It’s a variation of what people like, but we make it in a way you’ve never imagined.”

No matter what customers select, the menu design highlights the third course as the main course, featuring options like Short Rib Cavatelli with shaved truffles or a cut of Australian Wagyu steak, served with all the classic accompaniments expected from a top-tier steakhouse—all on one plate.

Short Rib Cavatelli with shaved truffles

Change is the norm

In the first six months, the new restaurant owner changed the menu twice.

“It changes when different ingredients become available,” explained Chef Greg. “Or when I’m in the supermarket and see something unique and am inspired to add it.”

“Now, in January, we’re getting ready to change the menu again.”

The Inspiration

Customers have developed trust in this restaurant and the crew and have learned to understand that whatever is on the plate will be consistently delicious. Chef Greg takes this as a personal challenge to continue to better his culinary skills and the Matisse experience any chance he gets…

“I’m always watching other people, reading cookbooks, watching videos, and looking at other menus,” said the chef. “And, of course, eating… You need to go out and eat. It’s the best way to learn.”

Chef Greg inspecting a new batch of truffles

Chef Greg speaks with clear passion and determination, stressing how much he cares about taking over the reins of the restaurant. “There’s no room for error. We’re prepping and adding a personal touch to every dish. It’s personal because it’s me, the Chef-Owner, who’s cooking it… Like you’re coming to our house for dinner.” His words show just how fired up he is to keep proving his restaurant’s worth to a steady and growing group of customers.

“You have to constantly wonder: Is there a better way to plate [this dish]?” finished the chef. “Could it be more pleasing to the guest? I’d like to make it better even after it is great… You have to push to be better so that you have food that people want to come back for…”

When you think of winemaking, the lush hills of Napa Valley or the sprawling vineyards of Bordeaux may come to mind. But Conor Quilty, winemaker at Meadowbrook Winery, in Oldwick, New Jersey, is changing the narrative of what it means to produce exceptional wine on the East Coast. In a sit-down with Jersey Bites, Quilty shared his journey from scouting pests in California vineyards to crafting award-winning wines in northern Hunterdon County.

From the East Coast to California…and Beyond

“I’ve worked in wine my entire career,” Quilty begins. His journey in winemaking began with a focus on plant biology and sustainability during his undergraduate studies. Realizing that the East Coast was not considered prime winemaking territory, he set out for California, where his work in vineyards—scouting for pests and working in integrated pest management—laid the foundation for a career that would eventually span the globe. After joining Jackson Family Wines and working with renowned wineries in Australia, Quilty ultimately decided to return to his East Coast roots to help shape New Jersey’s growing wine scene.

In 2020, he began consulting for Meadowbrook Winery, which at the time was an up-and-coming project with big dreams. By 2021, he took on a full-time role as winemaker and general manager. “The owner had this incredible vision but needed someone to manage the day-to-day operations,” he said. “Since then, we’ve planted 15 acres of vines, produced 2,000 cases of wine, and launched the brand. It’s been a whirlwind.”

Refining the Approach: Quality Over Quantity

In collaboration with Meadowbrook’s ownership, Quilty focused on a smaller portfolio of wines that Meadowbrook could consistently excel at. “The New Jersey wine scene has historically been very experimental,” he said. “We wanted to narrow that down to six to ten wines that we can produce consistently and really shine.” Set in the cooler climate of Hunterdon County, Meadowbrook benefits from the unique growing conditions, allowing varieties like Chardonnay, Cabernet Franc, Albariño, pinot noir, and pinot meunier to thrive and form the backbone of the winery’s up-and-coming sparkling wine program.

For Quilty, sparkling wine is a passion project. “We’ve bottled 500 cases of traditional method sparkling wine from some of our first vintages, but we’re letting it age,” he said. While it’s a waiting game, Quilty is optimistic that the sparkling wines will become a significant part of the winery’s portfolio once they’re ready for release.

In addition, his 2022 Cabernet Franc recently won the prestigious Governor’s Cup, a milestone that underscores Meadowbrook’s growing success. Quilty credits the grape’s adaptability to New Jersey’s terroir and emphasizes the team effort behind the award-winning wine. “Cabernet Franc does exceptionally well in New Jersey,” he said. “It’s bright, fruit-forward, and expressive—everything we love about this grape.”

Local Partnerships and Regional Recognition

Meadowbrook Winery’s success isn’t just about the wines; it’s about cultivating partnerships and fostering awareness of New Jersey wines. “Getting New Jersey wines into local restaurants is essential,” Quilty notes. While challenges remain—particularly around pricing and perceptions of quality—the winery is making strides in changing the local landscape. Through early partnerships with renowned establishments like Red Horse by David Burke and The Tewksbury Inn, Meadowbrook is slowly building a name for itself. By aligning with farm-to-table restaurants such as Juniper Hill and Ninety Acres, Meadowbrook’s wines are now paired with some of the region’s best cuisine.

Looking to the Future: A Tasting Room That Reflects the Vision

Meadowbrook Winery is constructing a state-of-the-art tasting room designed to provide a refined and educational wine experience. “We’re building something the town supports—no large events, no food trucks—while creating a space that fills a gap in the market,” Quilty explains.

The tasting room will focus on curated tastings, food pairings, and education, offering visitors a more intimate, high-end experience. Construction is well underway. Quilty is optimistic that the tasting room will open by Summer 2025—possibly even by Memorial Day. As Meadowbrook Winery continues to grow, it’s clear that this winery is a rising star in New Jersey’s wine industry, poised to make a lasting impact.
