Tastes Like Summer Banana Crème Pie

Served in a mason jar, The Gables’ deconstructed version of an old favorite rocks with flavor and style.

Start with ripe bananas sliced on the diagonal, fill the bottom of your jar with pastry crème (recipe below) about an eighth of the jar height; add a layer of sliced bananas, a layer of crumbled shortbread cookie, then whipped crème and for the pièce de résistance shaved white chocolate. Repeat all layers. Serve chilled with a long spoon.

Pastry Crème

Ingredients:

4 cups milk

1 ½ cups cream

1 cup sugar

6 tbsp cornstarch

½ tsp salt

10 egg yolks

1 stick butter – ½ inch cubes

1 tbsp vanilla

½ cup banana liquor

½ cup banana extract

Directions:

Simmer the milk and cream.

Whisk together the sugar, starch, flour, and salt. Then add the egg yolks. Next, gradually add the milk to the egg and return to medium-low heat for 3 minutes.

Transfer to blender and add the butter and vanilla. Puree the ingredients until smooth and then transfer to a separate bowl. Chill.

Butter Cookies

Prep time: 15 min

Inactive prep time: 30 min

Cook time: 30 min

Serves: 20

Ingredients:

¾ pound unsalted butter, at room temperature

1 cup sugar, plus extra for sprinkling

1 ½ tsp pure vanilla extract

3 ¼ cups all-purpose flour

1 pinch salt

Directions:

Preheat the oven to 350 degrees F.

In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and 1 cup of sugar until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.

Roll the dough ½-inch thick and cut with a 3 by 1-inch finger-shaped cutter. Place the cookies on an ungreased baking sheet and sprinkle with sugar. Bake for 20 to 25 minutes, until the edges begin to brown. Allow to cool to room temperature. Break into bite size pieces for layers in your banana crème pie.

Whipped Cream

Ingredients:

1 quart heavy cream

½ box confectioners sugar

1 tbsp vanilla

Directions:

Combine ingredients and whip in a mixer. Chill.
